SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES

Time 1h25m

Yield 6 servings

Number Of Ingredients 5

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

RANCH GREEN BEANS & POTATOES W/ BACON RECIPE - (4.5/5)

Ranch Green Beans & Potatoes w/ Bacon Recipe - (4.5/5) image

Provided by msippigrl

Number Of Ingredients 8

3 (29 oz.) cans Delmonte Cut Green Beans & Potatoes, drained and rinsed
4 strips crispy-cooked bacon, cut or torn into small pieces (I used thick-cut bacon)
3 tablespoons unsalted butter
1 small onion, cut into thin wedges
2 cloves minced fresh garlic (1 tsp.)
3 teaspoons dry Hidden Valley Ranch Salad Dressing Mix
1/2 teaspoon coarse ground black pepper
Salt to taste, optional

Steps:

  • Drain the beans and beans & potatoes in a colander then rinse under cold tap water; set aside to drain well. Cut up onion and garlic and set aside. Cook bacon; drain on paper towels then cut or tear into small pieces. Set aside. In a large, deep skillet melt the butter over medium heat. Add onion and sauté just until softened. Add garlic and cook for another minute. Increase heat to medium-high; add the beans and potatoes and let cook undisturbed for 3-4 minutes then use an egg turner or similar spatula to flip the mixture over so you don't wreck the beans and potatoes. Cook down until almost all the liquid is gone, flipping occasionally to prevent scorching. When liquid is almost out, sprinkle the dry Ranch mix and black pepper over the top and flip over a couple of times to combine. Just before beans are finished cooking, add the bacon (or you can wait until serving and use it to garnish the top). (I put half of it in the beans and garnished top with other half). Taste and add salt only if needed since the bacon and Ranch mix are salty.

Number Of Ingredients 8

1/2 stick butter (4 Tbl.)
1 small sweet onion, cut into thin wedges
1 medium regular red potato, unpeeled, 1/2-3/4″ dice
1/4 tsp. coarse ground black pepper
3 strips crisp-cooked bacon, thinly sliced
1/2 tsp. finely minced garlic
1 1/2 tsp. dry Hidden Valley Ranch Salad Dressing or Dips Mix (either work)
1 (14.5 oz.) can green beans, drained

Steps:

  • In medium saucepan or small frying pan, melt butter. Add onion, potato and pepper. Sauté over medium heat until potatoes are fork tender. (I like to cover with a lid and stir every so often.) Add bacon, garlic, and Ranch Mix. Stir in well. Fold in green beans and heat through, simmering, stirring gently and occasionally so that you don't wreck them. Add pepper to taste. Add salt only if desired. *Ranch Mixes are salty.

Time 15m

Yield 5 serving(s)

Number Of Ingredients 4

1 lb fresh string bean, trimmed
2 tablespoons extra-virgin olive oil
2 tablespoons Hidden Valley® Original Ranch® Dressing
4 slices bacon, cooked, crumbled

Steps:

  • Bring a pot of water to a boil. Add string beans, and cook for 5 minutes. Drain the beans in a colander and immediately pour cold water over them, which will help set the green color and prevent them from cooking further.
  • Toss the beans with the olive oil.
  • Meanwhile, heat a large pan over medium-low heat. Add the green beans and ranch dressing to the pan and saute the mixture for approximately 3-5 minutes, until crisp tender.
  • Toss the crumbled bacon into the dish right before you serve it, so that the bacon stays crisp.

Tips:

  • Select fresh green beans: Look for beans that are bright green and snap easily. Avoid beans that are wilted or have brown spots.
  • Trim the green beans: Remove the ends of the green beans. You can also cut them into smaller pieces if desired.
  • Use a large skillet or Dutch oven: This will ensure that the green beans, potatoes, and bacon have enough space to cook evenly.
  • Cook the bacon first: This will render the fat and add flavor to the dish.
  • Add the green beans and potatoes to the skillet: Stir to coat them in the bacon fat.
  • Season the dish: Add salt, pepper, and garlic powder to taste.
  • Cook the dish over medium heat: Stir occasionally until the green beans and potatoes are tender, about 15 minutes.
  • Serve immediately: Ranch Green Beans, Potatoes, and Bacon is best served hot.

Conclusion:

Ranch Green Beans, Potatoes, and Bacon is a delicious and easy-to-make side dish that is perfect for any occasion. The bacon adds a smoky flavor to the dish, while the ranch dressing gives it a creamy and tangy flavor. This dish is sure to be a hit with your family and friends.
