2 tablespoons canola oil
.4 ounce ounce packet ranch dressing mix
1/2 cup sliced pepperoncini
1/4 cup pepperoncini juice
2 tablespoons butter
2 cups beef broth
1 tablespoon corn starch
1/2 cup sour cream

Steps:

  • Heat canola oil over med-high heat. Season roast with salt and sear in hot oil until golden brown.
  • Place roast in crock pot and sprinkle with dressing mix, pepperoncinis, pepperoncini juice, and dot with butter.
  • Cook in crock pot on LOW for 6-8 hours or HIGH for 3 ½ -4 or until the roast is fork-tender. Remove meat from pot and drain off cooking juices into a sauce pan, skimming the top for excess fat. Add 2 cups of beef broth to the juices and bring to a boil.
  • Mix 1 tbsp of corn starch with ¼ C of COLD water and slowly pour into the boiling broth mixture. Stir continuously until thickened and remove from heat. Stir in ½ cup of sour cream into the thickened broth and serve over the cooked meat.

1 (3 -4 lb) beef brisket or 1 (3 -4 lb) boneless bottom round roast
2 garlic cloves, cut into silvers
1 onion, sliced
1 cup vinegar
3 tablespoons bacon drippings or 3 tablespoons salad oil
2 cups coffee
2 cups water
1 lb carrot, peeled and quartered
12 small white onions
salt
pepper

Steps:

  • With a sharp knife make slits in the meat and insert garlic.
  • Place meat in a bowl and place onion on top of meat and pour vinegar over.
  • Refrigerate 24 hours, turning occasionally.
  • Drain and discard vinegar.
  • Pat roast dry.
  • Heat oil or bacon drippings in a dutch oven or large skillet and brown meat. Pour off excess oil and add coffee and water. Bring to a boil, cover and simmer for 3 hours or until tender.

One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.

2 tablespoons tomato paste
3 stalks celery, diced
3 cloves garlic, minced

2 cups beef broth
1/4 cup sweet orange marmalade
5 large red potatoes, quartered
4 carrots, cut on the diagonal into 1-inch chunks

  • Preheat the oven to 275 degrees F.
