Time 2h40m

Yield 8 to 10 servings

Number Of Ingredients 12

1 tablespoon unsalted butter, at room temperature
10 extra-large eggs
2 3/4 cups half-and-half
1/3 cup plus 2 tablespoons granulated sugar
1/3 cup light brown sugar, lightly packed
1 tablespoon pure vanilla extract
1 teaspoon grated orange zest, plus extra for serving
1/2 teaspoon kosher salt
10 cups (1-inch-diced) day-old challah bread
12 ounces fresh raspberries
Confectioners' sugar, for serving
Pure maple syrup, for serving

Steps:

  • Grease a 9 x 13 x 2-inch oval baking dish with the butter and set aside. In a large bowl, whisk together the eggs, half-and-half, 1/3 cup of granulated sugar, the brown sugar, vanilla, orange zest, and salt.
  • Spread half of the diced bread in the prepared baking dish. Sprinkle on the raspberries in one layer. Top with the rest of the bread and pour on the egg mixture, pressing down lightly to moisten the bread. Sprinkle with the remaining 2 tablespoons of sugar, cover with plastic wrap, and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees. Place the baking dish on a sheet pan and bake it for 60 to 70 minutes, until the custard is set and the top is puffed and browned. Check after 45 minutes; if the top is getting too browned, cover it lightly with aluminum foil. Cool for 10 minutes, sprinkle with confectioners' sugar, dust with extra orange zest, and serve warm with maple syrup.

Time 2h40m

Number Of Ingredients 9

1 loaf challah, cut into 3/4-inch-thick slices
1 1/4 pounds Bosc pears (3 to 4), peeled, cored, and thinly sliced lengthwise
9 ounces raspberries (1 1/2 cups)
3/4 cup sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon kosher salt
8 large eggs
2 cups whole milk
2 teaspoons pure vanilla extract

Steps:

  • Arrange bread, pears, and raspberries evenly in overlapping layers in a 2 1/2-to-3-quart baking dish. In a large bowl, whisk together 1/2 cup sugar, 1 teaspoon cinnamon, and salt. Add eggs, milk, and vanilla; whisk to thoroughly combine. Pour egg mixture evenly over bread and fruits; press with palms to fully submerge. Cover and let stand at room temperature 1 hour, or refrigerate up to 1 day.
  • Preheat oven to 350 degrees. Stir together remaining 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle evenly over top of bread and fruits. Bake until puffed, golden brown on top, and set, 55 to 65 minutes (if browning too quickly, tent with foil). Let stand 10 minutes before serving.

Tips:

  • Use fresh raspberries. Fresh raspberries have the best flavor and will give your baked French toast a delicious, juicy taste. If you can't find fresh raspberries, you can use frozen raspberries that have been thawed and drained.
  • Don't overmix the batter. Overmixing the batter will make your French toast tough. Mix just until the ingredients are combined.
  • Use a non-stick skillet. A non-stick skillet will prevent your French toast from sticking and will make it easier to flip.
  • Cook the French toast over medium heat. Cooking the French toast over medium heat will help it cook evenly and prevent it from burning.
  • Serve the French toast immediately. French toast is best served immediately after it is cooked. If you need to keep it warm, place it in a preheated oven set to 200 degrees Fahrenheit.

Conclusion:

Raspberry baked French toast is a delicious and easy-to-make breakfast or brunch dish. It's perfect for a special occasion or a lazy weekend morning. With its sweet and tangy flavor, raspberry baked French toast is sure to be a hit with everyone at your table.
