4 boneless, skinless chicken breast cutlets
Kosher salt and freshly ground black pepper

1/4 cup olive oil
4 cloves garlic, chopped
1 large shallot, chopped
1 cup chicken stock
1/2 cup white wine
6 ounces cremini mushrooms, sliced
1 cup fresh raspberries
1 tablespoon unsalted butter
1 tablespoon balsamic vinegar
1 teaspoon grated lemon zest

Steps:

  • Season the chicken with some salt and pepper. Heat a large skillet over medium heat and add the olive oil. Once the oil is hot but not burning, add the chicken and sear for 3 minutes on each side. Remove from the skillet and set aside.
  • Using the same skillet, add the garlic and shallot and cook over medium heat for 1 minute. Add the chicken stock and wine and cook until slightly reduced, about 10 minutes. Add the sliced mushrooms and lower the heat to a simmer. Return the chicken to the skillet, cover and cook until the chicken is cooked through, an additional 10 minutes. 1 cup chili sauce
3/4 cup raspberry preserves
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
6 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons plus 1/2 cup olive oil, divided
1/2 teaspoon salt
1/4 teaspoon pepper
24 slices French bread (1/2 inch thick)
12 slices Muenster cheese, halved
Shredded lettuce

Steps:

  • In a small saucepan, combine the first four ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Set aside 1 cup for serving and remaining sauce for basting., Flatten chicken breasts to 1/4-in. thickness. Cut in half widthwise; place in a large resealable plastic bag. Add 2 tablespoons oil, salt and pepper. Seal bag and turn to coat. brush remaining oil over both sides of bread., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chicken, uncovered, over medium heat for 5-7 minutes on each side or until no longer pink, basting frequently with raspberry sauce. Remove and keep warm., Grill bread, uncovered, for 1-2 minutes or until lightly browned on one side. Turn and top each piece of bread with a slice of cheese. 1 cup chili sauce
3/4 cup raspberry preserves
2 tablespoons red wine vinegar

Steps:

  • Combine the chili sauce, preserves, vinegar and mustard in a saucepan; bring to a boil.
  • Reduce the heat and simmer for 2 minutes.
  • Set aside 1 c of the sauce for drizzling on the sandwich.
  • Flatten the breasts to 1/4" thick and cut in half widthwise.
  • Place in a resealable plastic bag; add 2 T oil, salt and pepper.
  • Turn the sealed bag to coat.
  • Grill the chicken over medium heat until the juices run clear (about 5-7 minutes per side), basting often with the remaining sauce.
  • Remove the chicken from the grill and keep it warm.
  • Using the 1/2 c of oil, brush on both sides of each piece of bread.
  • Grill until lightly browned on one side.
  • Turn the bread over and top each slice with a piece of cheese.
  • Grill until the bottom of the bread is lightly toasted and cheese is slightly melted.
  • To make each sandwich, top half of the slices of bread with a piece of chicken, lettuce, tomato and drizzle on some of the 1 c raspberry sauce.
  • Top with the remaining slices of bread.

4 thin-cut chicken breasts (chicken cutlets)
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
1 teaspoon cayenne pepper
1 large egg, lightly beaten
1/4 cup buttermilk
1 tablespoon plus 1 cup Louisiana-style hot sauce
1 cup panko breadcrumbs
6 tablespoons salted butter, melted
1/4 cup olive oil
4 toasted buns
1/2 cup pickle chips, drained

Steps:

  • Sprinkle the chicken breast with salt and pepper and set aside. Mix the flour and cayenne in a shallow dish or bowl. Stir together the egg, buttermilk and 1 tablespoon hot sauce in a second shallow dish or bowl. Add the breadcrumbs to a third shallow dish. Coat each chicken breast by dredging in the flour mix, then dipping in the egg/buttermilk mixture and then finally in the breadcrumbs. Set aside.
  • To a bowl, add the remaining cup of Louisiana hot sauce and 2 tablespoons of the melted butter. Mix together and set aside.
  • Heat the olive oil and remaining 4 tablespoons butter in a large skillet over a medium heat. When the oil is hot and the butter has melted, add the chicken pieces to the skillet and fry until golden and cooked through, about 4 minutes per side. Remove and set aside. One by one dip the crisp chicken into the Louisiana hot sauce and butter mixture, turning to coat completely.
  • Serve on the toasted buns with tons of pickles.

2 tablespoons Worcestershire sauce
1 teaspoon red pepper flakes

1 pound boneless chicken thighs, cut into 1-inch pieces

6 skin-on chicken thighs
