2 large jalapeno peppers, seeded and diced
2 cloves garlic, minced
4 teaspoons adobo sauce
2 (6 ounce) containers fresh raspberries
½ cup apple cider vinegar
½ teaspoon salt

½ cup white sugar

Steps:

  • Heat olive oil in a skillet over medium heat. Stir in jalapenos; cook until tender, about 5 minutes. Mix in garlic, and adobo sauce; bring to a simmer. Stir the raspberries into the sauce; cook until soft, about 3 minutes. Stir in the vinegar, salt, brown sugar, and white sugar. Mix well. Simmer until thickened and reduced by half, about 15 minutes. Two 1-pound pork tenderloins
1 cup Japanese (panko) breadcrumbs
1 cup finely chopped pecans
4 tablespoons chopped fresh rosemary
1/2 teaspoon salt
1 teaspoon ground black pepper
2 egg whites
One 12-ounce jar raspberry preserves
2 tablespoons adobo sauce, or to taste

Steps:

  • For the pork: Preheat the oven to 375 degrees F. Prepare the pork tenderloins by rinsing under cold water. Pat dry and set aside.
  • Combine the breadcrumbs, pecans, rosemary, salt and pepper in a 9-by-13-inch pan. Set aside. Place the egg whites in a small bowl and whip slightly.
  • Brush the tenderloins with the whipped egg whites. Then dredge in the breadcrumb mixture, pressing to adhere. Place on a baking sheet. Bake until done, about 25 minutes. Remove from the oven and let rest about 10 minutes prior to slicing.
  • For the raspberry-chipotle sauce: Combine the raspberry preserves with the adobo sauce.

1 tablespoon olive oil
½ cup diced onion
2 tablespoons minced garlic
2 tablespoons chipotle peppers in adobo sauce, chopped, or more to taste
1 pint fresh raspberries
½ cup raspberry vinegar
¾ cup honey

  • Heat oil over in a medium saucepan over medium-high heat. Cook and stir onion in the hot oil until soft and slightly browned, about 4 minutes. Add garlic to the pan and saute for 1 minute. 1/3 cup seedless raspberry preserves
1/3 cup hickory flavored barbecue sauce or 1/3 cup chipotle chile in adobo
1 (4 ounce) can diced green chilies
1 1/2-2 cups diced cooked chicken

1 1/2-2 cups shredded monterey jack cheese
1/2 ripe tomatoes, thinly sliced
1 cup shredded parmesan cheese

Steps:

  • Prepare crust and place in a large pizza pan.
  • Preheat oven 400°F.
  • Poke a few fork holes in the middle (to eliminate puffing).
  • Cook 6 to 8 minutes. Take out of oven.
  • Increase oven temp to 425°F.
  • While crust is cooking, mix preserves, barbecue or chipotle sauce and diced green chiles together. Mix well.
  • Spread one half of sauce mixture over the entire crust.

  • Broil for about 2 minutes at 400°F until cheeses are melted.

1/4 cup frozen raspberry concentrate

1/3 c red wine vinegar

  • 1. Crush fruit in a food mill or food processor.
  • 2. Empty raspberries from food processor and set aside; puree chipotle peppers with minced garlic and red wine vinegar.

2 (1 lb each) pork tenderloins
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
salt and freshly ground black pepper
1 tbsp olive oil
1 bottle Razzpotle

Steps:

  • Wash pork tenderloins in cold water and pat dry. In a small bowl combine rosemary, thyme, and salt and pepper to taste. Mix well; rub over tenderloins. Allow to stand for 10 minutes. Heat oven to 350 degrees. Heat oil in a heavy, ovenproof skillet, over medium heat. Place tenderloins in skillet and sear, about 1 minute per side. Place skillet in oven and roast tenderloins until thermometer inserted into thickest part of meat registers 160 degrees, usually about 35 minutes. Remove pork to a serving platter and coat generously with Razzpotle sauce.
