1 lb fresh cranberries
1 (20 ounce) can crushed pineapple
1/2 cup walnut pieces (or amount as desired)
2 packages raspberry Jell-O gelatin
2 cups boiling water
1 cup cold water
1 3/4 cups sugar
2 (8 ounce) packages cream cheese

Steps:

  • Pick over cranberries.
  • Chop cranberries in food processor until fine.
  • Mix cranberries with sugar and let stand until sugar dissolves.
  • Add 2 cups of boiling water into jello, and stir until the jello dissolves.
  • Then add the 1 cup of cold water to the jello mixture.
  • Let stand until cooled.
  • Drain pineapple and reserve the juice.
  • Add the pineapple, cranberries, and walnuts, and stir well.
  • Pour into 9x13 dish.
  • Chill to set.
  • With a mixer, blend enough reserved pineapple juice into the cream cheese, until it becomes the consistency of whipped cream.
  • Spread over the top of the chilled gelatin.
  • Keep cold.

1 (6 ounce) box raspberry Jell-O gelatin
2 cups boiling water
1 (20 ounce) can crushed pineapple

1 (8 ounce) container sour cream
1/2 cup sugar

Steps:

  • Mix jello with the two cups of boiling water till disolved.

2 cups boiling water, divided
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons lemon juice
1 cup heavy whipping cream
1 package (8 ounces) cream cheese, softened
1/2 cup chopped pecans

Steps:

  • In a small bowl, dissolve gelatin in 1 cup boiling water. In another bowl, combine cranberry sauce and remaining water; add gelatin mixture and lemon juice. 1 (12 ounce) package fresh cranberries
1 cup white sugar
1 (6 ounce) package red Jell-O® mix
1 (8 ounce) can crushed pineapple, drained
¾ cup orange juice
1 apple with peel, grated
1 cup chopped pecans
1 cup whipping cream
1 (8 ounce) package cream cheese, softened

Steps:

  • Process cranberries in blender or food processor; pour sugar over cranberries and stir to dissolve.
  • Bring 3/4 cup of water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries, and add pineapple, orange juice, apple and pecans. Mix well, cover and refrigerate overnight.

1 (16 ounce) can jellied cranberry sauce
2 (3 ounce) packages black cherry-flavored gelatin mix (such as Jell-O®)
1 ¾ cups boiling water
1 (16 ounce) carton sour cream

Steps:

  • Mash jellied cranberry sauce in a 3-quart bowl. Stir gelatin mix thoroughly into cranberry sauce. Pour boiling water into mixture and stir until gelatin has dissolved completely, about 3 minutes.
  • Chill in refrigerator until softly set, 2 to 3 hours. Gently fold sour cream into gelatin mixture, leaving marbled streaks of sour cream and gelatin mix. Return to refrigerator until firmly set, 4 hours to overnight. Store leftovers in refrigerator.

2 cups water boiling
1 (16-ounce) can whole cranberry sauce whole berry
2 (10-ounce) packages frozen strawberries sliced, thawed
1/2 cup pecans pieces
lettuce leaves
Whipped topping

1 (3-ounce) package cream cheese softened
1 cup sour cream
1/3 cup sugar
1 tablespoon lemon juice fresh

Steps:

  • * (Note: The salad in the first edition of Special Dishes for Special Days calls for a Salad Topping instead of whipped topping. Here is the recipe.) Salad Topping * Combine cream cheese, sour cream, sugar and lemon juice in a small bowl. Beat with an electric mixer until well blended. Spoon into a serving bowl and cover with plastic wrap. Refrigerate until ready to serve. Makes 10 servings. Empty the gelatin into a large mixing bowl. Pour in the boiling water and stir until the gelatin is dissolved. Add the cranberry sauce and break up the pieces with a spoon. Add the strawberries and pecans. Stir until well mixed. Pour into a 6-cup ring mold. Cover and refrigerate overnight. To unmold, dip the mold into warm water for a few seconds. (Be careful you don't get water on the gelatin mixture.) Set the mold on a towel and place a serving plate on top. Turn over the plate and mold and shake gently to loosen the salad. Remove the mold. Place lettuce leaves around the salad and refrigerate for 1 hour. Serve with whipped topping.(Make the day before. Unmold and refrigerate 1 hour before serving.)
