1 cup boiling water
1 tablespoon lemon juice
2 cups frozen raspberries
1 (8 ounce) container frozen whipped topping, thawed

1 cup sugar
4 large egg yolks
2 teaspoons vanilla extract
1 drop lemon juice
5-1/3 cups all-purpose flour
1/4 teaspoon salt
FILLING:
1 jar (12 ounces) red raspberry preserves
ICING:
1 cup confectioners' sugar
1 drop lemon juice
1 drop red food coloring, optional
1 to 2 tablespoons 2% milk

Steps:

  • Cream butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in vanilla and lemon juice. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Refrigerate until easy to handle, about 1 hour. , Preheat oven to 350°. Divide dough into three portions. 1 package (10 ounces) frozen raspberries, thawed
1/4 cup cold water
1 envelope unflavored gelatin
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 cup heavy whipping cream, whipped
Fresh raspberries and mint

Steps:

  • In a large bowl, combine the crumbs, 3 tablespoons sugar and butter. Press onto the bottom of a 9-in. springform pan. Bake at 350° for 10 minutes. 1 (6 ounce) box raspberry Jell-O gelatin
3/4 cup boiling water
