GRILLED CHICKEN BREASTS IN RASPBERRY VINEGAR MARINADE

Grilled Chicken Breasts in Raspberry Vinegar Marinade image

This recipe was adopted from the RecipeZaar account. After making this myself, I found that the addition of a couple of tablespoons of seedless raspberry jam to the basting liquid really added a nice flavor. Use in the last few minutes of broiling or grilling as the jam will burn.

Raspberry Habanero Marinade image

This marinade is sneaky, in that people are initially fooled by the sweet raspberry flavor, then the heat of the Habaneros hits your taste buds like a runaway train. Recommended cuts: Shrimp (2 to 3 hours); poultry breasts (4 to 6 hours) From: Marinades by Jim Tarantino.

Time 50m

Yield 1 1/2 cups

Number Of Ingredients 5

3 dried habanero chiles or 3 ground habanero chile pepper
1 tablespoon grated orange zest
1 cup raspberry vinegar
1 1/2 cups fresh unsweetened raspberries or 1 1/2 cups frozen unsweetened raspberries
1/3 cup orange juice (fresh preferred)

  • Reduce the vinegar to 1/3 cup, strain, and discard the solids.

  • Cool to room temperature and add the orange juice.
  • This marinade will keep for 1 to 2 weeks, in an airtight jar, in the refrigerator.

Another recipe that is adapted from several I have seen at various websites. Many recipes use brown sugar, but since I was out of brown sugar, I decided to experiment with raspberry preserves. Sweet & tangy with a bit of a garlic and red pepper bite.

Tips:

  • Choose the right raspberries: Use fresh, ripe raspberries for the best flavor. Frozen raspberries can also be used, but they should be thawed before marinating.
  • Make sure the marinade is well-balanced: The marinade should be a good balance of sweet, sour, and savory. If it's too sweet, it will overpower the flavor of the meat or vegetables. If it's too sour, it will make the food taste tart. And if it's too savory, it will make the food taste salty.
  • Marinate the food for at least 30 minutes: This will give the marinade time to penetrate the food and infuse it with flavor. The longer you marinate the food, the more flavorful it will be.
  • Use the marinade as a cooking sauce: Once the food has been marinated, you can use the marinade as a cooking sauce. This will help to keep the food moist and flavorful.

Conclusion:

Raspberry marinade is a versatile and delicious way to add flavor to your favorite foods. It's perfect for marinating meat, poultry, fish, and vegetables. Raspberry marinade can also be used as a cooking sauce or dressing. With its sweet, tart, and savory flavor, raspberry marinade is sure to be a hit with your family and friends.
