1 cup raspberry jam (sweetened with fruit juices, no sugar added)
1/4 cup cold water
2 tablespoons red wine vinegar

1 cup fresh raspberry
3 tablespoons raspberry vinegar
1 tablespoon sugar
1/4 cup vegetable oil
3 tablespoons heavy cream, chilled
2 heads bibb lettuce, torn into bite-size pieces
1/2 cup raisins
2 ounces walnuts, toasted

Steps:

  • Mash 1/2 cup raspberries through a fine sieve set over a bowl. Press and extract as much pulp as possible.
  • Add vinegar and sugar to pulp and stir to dissolve.

1 medium pear, chopped

2 teaspoons minced fresh sage
2 packages (6 ounces each) fresh baby spinach

1/2 cup toasted walnuts, chopped
6 oz. baby spinach, rinsed and dried
1/2 cup dried cranberries
1/2 cup crumbled blue cheese or feta
2 tomatoes, chopped
1 avocado, peeled, pitted and diced
1/2 red onion, thinly sliced
2 Tbsp. red raspberry jam (with seeds)
2 Tbsp. red wine vinegar
1/4 cup walnut oil or extra virgin olive oil

  • 1. To toast the walnuts, preheat oven to 375 F. Arrange walnuts in a single layer on a baking sheet. Toast in the oven for 5 minutes, or until the walnuts begin to brown. 2.
