RAZOR CLAM FRITTERS
Steps:
- In a bowl, combine flour, baking powder, egg with clams; mix well until batter is well blended. In a wide frying pan, heat butter and oil over medium high heat until it foams but doesn't brown. Drop clam batter into hot fat by heaping tablespoonfuls, adding as many spoonfuls as will fit without crowding. I usually get 6 to 7 or 8 fritters. Cook, turning once, until fritters are browned on both sides (less than a minute per side). Salt to taste and serve immediately on heated plates. Serves 2.

Tips:
- Selecting Fresh Razor Clams: Choose live razor clams with tightly closed shells. Avoid any with cracked or broken shells or foul odor.
- Cleaning Razor Clams: Soak the clams in cold water for 30 minutes to allow them to expel any sand or grit. Scrub the shells gently with a brush to remove any dirt or debris.
- Mincing Razor Clams: Use a sharp knife to finely mince the razor clams. This will help incorporate them evenly into the fritter batter.
- Preparing the Batter: Ensure the batter is not too thick or too thin. It should be thick enough to coat the razor clam pieces but not too thick that it becomes doughy.
- Frying the Fritters: Heat the oil to the correct temperature before adding the fritters. This will prevent them from absorbing too much oil and becoming greasy.
- Draining and Serving: Once the fritters are golden brown, remove them from the oil and drain on paper towels to remove excess oil. Serve the fritters hot with your favorite dipping sauce.

Razor clam fritters are a delicious and versatile appetizer or snack. By following these tips, you can create perfectly crispy and flavorful fritters that will impress your guests.
