SOUTHERN SWEET ICED TEA
This is how my Granny made sweet tea and it is some kind of sweet. Know that and beware. Pa-Paw used to down 2-3 glasses after working in the garden all day. Back off the sugar if you can't handle it. This one is for true southerners only ;)

REAL SOUTHERN SWEET TEA
If I'm working, which is to say I'm not drinking anything strong because I'm focused on winning a competition, I don't drink anything besides sweet tea. I love sweet tea, truly. It's the drink of the South, the drink of my home. Here's how we do it.

Steps:
- Bring 1 quart of water room-temperature to a boil in a saucepan. Pour the boiling water into a pitcher or large bowl, add the loose tea, and let steep for 5 to 10 minutes.
- In the meantime, fill a large pitcher (large enough to hold at least 2 quarts of liquid) with the remaining 1 quart room-temperature water.
- Strain the brewed tea into the pitcher containing the room-temperature water. Discard the tea leaves. Set the pitcher aside.
- In a small nonreactive pot, combine the sugar and cold water. Bring to a boil over medium heat, stirring to dissolve the sugar. Add the lemons and remove from the heat. Allow to cool for 10 minutes. Strain the lemon-sugar syrup into the pitcher. Discard the lemon slices. Refrigerate the sweet tea until serving time.
SOUTHERN SPICED TEA
This is my mother's recipe, originally from the 1800's, modern conversions are in parentheses. I grew up drinking it in the winter but like it year round, even iced. I suggest letting the flavors in the tea blend before you serve it, the cloves will become more pronounced. No offense to you powdered spiced tea people, but this is the real thing!

Tips:
- Use Fresh Ingredients: Always use fresh tea leaves or tea bags for the best flavor and aroma. Avoid using old or stale tea as it will result in a weak and bland iced tea.
- Steep the Tea Properly: The steeping time is crucial for the flavor of your iced tea. Follow the recommended steeping time on the tea package, or adjust it according to your preference. Generally, black teas should be steeped for 3-5 minutes, while green teas should be steeped for 1-2 minutes.
- Use Cold Water: Always use cold water to brew your tea. Hot water will extract bitterness from the tea leaves and result in a harsh flavor.
- Sweeten to Taste: Add sugar or your desired sweetener after the tea has cooled down. This allows you to control the sweetness level and prevents the sugar from caramelizing in the hot tea.
- Chill Thoroughly: After brewing, transfer the tea to a pitcher or container and let it cool completely. You can also place it in the refrigerator or add ice cubes to chill it faster.
- Serve with Garnish: Enhance the presentation of your iced tea by garnishing it with fresh mint leaves, lemon slices, or cucumber slices. These garnishes also add a refreshing touch to the tea.
