1/2 cup reduced-fat mayonnaise
2 tablespoons cider vinegar
1 small red cabbage (1 1/2 pounds), cored, quartered, and finely shredded
2 medium Granny Smith apples, peeled and grated
Coarse salt and ground pepper

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage. This will help to create a slaw that is both tender and crisp.
  • If you don't have a mandoline, you can use a food processor fitted with a slicing blade. Just be sure to slice the cabbage thinly and evenly.
  • To make the dressing, whisk all of the ingredients together in a small bowl until smooth. You can adjust the amount of vinegar or sugar to taste.
  • Once the dressing is made, pour it over the cabbage and toss to coat. Be sure to massage the dressing into the cabbage so that it is evenly distributed.
  • Cover the slaw and refrigerate for at least 30 minutes before serving. This will allow the flavors to meld and the slaw to chill.
  • Serve the slaw as a side dish or as a topping for tacos, sandwiches, or burgers.
