1 large granny smith apples (cored and sliced 1/4, thick, *thicker if you like your apples to be more crisp) or 1 large any good baking apple (cored and sliced 1/4, thick, *thicker if you like your apples to be more crisp)
1/2 teaspoon salt

Steps:

  • Place cabbage in colander in sink. Boil about 2 quarts water, pour half over cabbage, drain well, pour rest over and drain completely.

BRAISED RED CABBAGE WITH APPLES

Braised Red Cabbage With Apples image

This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

Provided by Martha Rose Shulman

Categories     easy, one pot, side dish

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 8

1 large red cabbage, 2 to 2 1/2 pounds, quartered, cored and cut crosswise in thin strips
2 tablespoons canola oil
1 small onion, thinly sliced
2 tart apples, such as Braeburn or granny smith, peeled, cored and sliced
About 1/3 cup balsamic vinegar
1/4 teaspoon ground allspice
Salt
freshly ground pepper to taste

Steps:

  • Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. Add 2 tablespoons of the balsamic vinegar and cook, stirring, until the mixture is golden, about three minutes, then add the apples and stir for two to three minutes.
  • Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice, another 2 tablespoons balsamic vinegar, and salt to taste. Toss together. Cover the pot, and cook over low heat for one hour, stirring from time to time. Add freshly ground pepper, taste and adjust salt, and add another tablespoon or two of balsamic vinegar as desired.

Tips:

  • To make the wapples, be sure to use a waffle maker that is hot and well-greased. This will help the wapples to cook evenly and prevent them from sticking.
  • If you don't have a waffle maker, you can also cook the wapples in a skillet over medium heat. Just be sure to grease the skillet well and cook the wapples for a few minutes per side, or until they are golden brown and cooked through.
  • Feel free to experiment with different types of fruit jelly or jam in this recipe. Raspberry, strawberry, or orange marmalade would all be delicious options.
  • You can also add a variety of spices to the wapple batter to taste. Cinnamon, nutmeg, and ginger are all popular choices.
  • If you are making the wapples ahead of time, be sure to store them in an airtight container in the refrigerator. They will keep for up to 2 days.

Conclusion:

Red cabbage wapples and grape jelly is a classic comfort food that is easy to make and always a hit with the family. Whether you serve them for breakfast, lunch, or dinner, these wapples are sure to be a favorite. So next time you are looking for a quick and easy meal, give this recipe a try.
