2 tablespoons olive oil
1 teaspoon brown sugar
1 bunch red Swiss chard, rinsed and chopped
¼ cup kalamata olives
2 tablespoons capers
½ teaspoon coarse sea salt, or to taste
freshly ground black pepper to taste
1 lemon, juiced

Steps:

  • In a cast iron skillet, cook onions in olive oil over medium-high heat until they begin to brown. Stir in brown sugar, and continue cooking for a few minutes.

3 pound green Swiss chard (about 2 large bunches)
2 tablespoons olive oil
2 tablespoons unsalted butter
2 medium onions, halved lengthwise and thinly sliced
2 garlic cloves, finely chopped

Steps:

  • Cut stems and center ribs from chard, discarding any tough portions, then cut stems and ribs crosswise into 2-inch pieces. Stack chard leaves and roll up lengthwise into cylinders. Cut cylinders crosswise to make 1-inch-wide strips.
  • Heat oil and butter in a large heavy pot over medium heat until foam subsides, then cook onions and garlic with 1/2 teaspoon salt and 1/4 teaspoon pepper, covered, stirring occasionally, until onions begin to soften, about 8 minutes. Add chard stems and ribs, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until stems are just tender, about 10 minutes. 3 tablespoons butter or olive oil
5 anchovy fillets
2 garlic cloves, finely chopped
2/3 cup bread crumbs
1 tablespoon extra virgin olive oil, plus additional for drizzling
1 yellow onion, halved from stem to root and thinly sliced crosswise
Kosher salt

1 pound Swiss chard, ribs removed, leaves chopped
1/2 pound whole-wheat pasta, such as fusilli

Steps:

  • In a large skillet over medium heat, melt the butter. Add 3 anchovies to the skillet; cook until melted, about 2 minutes. Add the garlic and cook 1 minute. Stir in the bread crumbs and toast until golden, 3 to 4 minutes. Transfer to a bowl.

12 ounces lasagna noodles, uncooked
4 tablespoons olive oil
1 garlic clove, minced
2 bunches red swiss chard, stemmed, coarsely chopped and blanched
1 cup ricotta cheese
salt and pepper
4 1/2 cups onions, thinly sliced
1 teaspoon sugar
1 teaspoon balsamic vinegar
3 cups low-fat milk
1/3 cup flour
1 1/4 cups parmesan cheese, grated or 1 1/4 cups asiago cheese
2 tablespoons parmesan cheese, grated or 2 tablespoons asiago cheese

Steps:

  • Cook noodles just until tender. Cover with plastic wrap and set aside.
  • In a large skillet, heat 1 tablespoon oil over medium heat.
  • Add garlic and cook, stirring often, about 30 seconds.
