2 tablespoons ground toasted cumin
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 cup olive oil
12 sea scallops, rinsed and patted dry
1 cup peanut oil
3 blue corn tortillas, cut into very thin strips
Kosher salt
3 cups assorted greens, mizuna, arugula and frisee
Citrus Vinaigrette
large ripe mango, peeled, pitted and diced
1 red pepper, finely diced
1 yellow pepper, finely diced
1/4 cup chopped cilantro
1/4 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup lemon juice
2 basil leaves, chiffonade
2 tablespoons finely chopped red onion
1 1/4 cups pure olive oil
Salt and freshly ground pepper

Steps:

  • For the Scallops: Combine ancho, cumin, salt and pepper in a medium shallow bowl. Heat oil in a large saute pan until smoking. Dredge 1 side of each scallop in the spice mixture. · lime butter sauce (recipe below)
Red Chile Crust
· 1 TB. yellow corn meal
· ½ tsp. cumin
· ½ tsp. granulated garlic
· 2 TB. paprika
· 2 TB. chile powder
· ½ tsp. salt
Lime Butter Sauce
· ½ cup white wine
· juice of one lime
· ¼ cup diced yellow onion
· 2 cloves minced garlic
· ½ tsp. salt
· dash of white pepper
· ¼ cup heavy cream
· ½ stick butter, unsalted, room temperature, cut in pieces
· zest of one lime

Steps:

  • Combine wine, lime juice, onion, garlic, salt and white pepper in a small pot. Bring mixture to a boil, reduce heat and simmer for 10-15 minutes over a medium heat, or until liquid is reduced by half. Add the heavy cream and continue to simmer for about 5 minutes or until thick. Turn heat to a very low temperature and slowly add the butter pieces, stirring constantly until butter is dissolved. Remove from heat, then strain through a fine strainer. Add lime zest and mix well. To Assemble Brush salmon filet with olive oil and dredge lightly in Red Chile Crust. Cook on oiled flat griddle or broil approximately 8-10 minutes. Fish should have a well seared crust. To serve, ladle Lime Butter Sauce on plate and top with grilled fish.

2 teaspoons chili powder
1 pound medium zucchini, quartered lengthwise, cut crosswise into 3-inch spears (about 1/2 inch thick)
2 tablespoons olive oil
2 packages (10 ounces each) frozen corn kernels (4 cups)
2 garlic cloves, minced
1 cup chopped scallions
1 container (16 ounces) prepared fresh tomato salsa (2 cups)
Lime wedges, for garnish (optional)

Steps:

6 Serrano chilies, seeded and chopped
1 clove garlic, chopped
1/4 cup olive oil
4 6-ounce pieces of salmon fillet
1/2 teaspoon salt
1 red bell pepper, diced small
2 teaspoons olive oil
3 shallots, chopped
1 clove garlic, minced
1/2 Serrano chili, seeded and chopped
1 1/4 cups low-salt chicken broth
1/2 10-ounce package frozen corn, defrosted
1 1/4 cups cooked black beans
1 1/2 tablespoons arrowroot, dissolved in 1 tablespoon water
1/2 teaspoon salt
2 tablespoons plus 1 teaspoon olive oil
1 small onion, finely chopped
1 clove garlic, minced
2 fresh tomatillos, husked, rinsed and coarsely chopped
1/2 cup cilantro leaves
