1 small onion, finely chopped
1 garlic clove, minced
1 tsp cumin powder
0,5 tsp coriander powder
500 ml vegetable broth
125 ml water
250 gr dried red lentils
1 carrot (about 170 gr), grated
1 tsp salt
10 gr fresh cilantro or parsley, chopped
125 gr panko
1 egg, beaten
For lentil burgers served on burger buns:
Vegetables of choice
Any sauce of liking
8 burger buns

Steps:

  • Saute onion and garlic until golden and tender.
  • Add cumin powder and coriander powder, cook for about 10 seconds.
  • Add the vegetable broth, water, lentils, carrot and salt. Bring to a boil, then reduce heat to medium/low and allow to simmer until lentils are tender and all the liquid is absorbed, about 10 minutes*. Stir occasionally.

1/4 cup mayonnaise
1/2 teaspoon fresh lemon juice
1 garlic clove, minced
2 cups water
3/4 cup dried red lentils
3/4 teaspoon salt, divided
1 cup diced onion
1/2 cup finely diced carrot
3 garlic cloves, chopped
2 cups chopped mushrooms
1 teaspoon dried marjoram
1/4 teaspoon black pepper
1/3 cup dry breadcrumbs
1 tablespoon fresh lemon juice
2 egg whites
1 tablespoon vegetable oil
hamburger bun
lettuce

sliced onion

Steps:

  • To make aioli: Combine all ingredients; cover and chill.
  • To make burgers: Combine water, lentils and 1/4 tsp salt in a medium saucepan; bring to a boil. Cover, reduce heat to medium-low and simmer 20 minutes. Drain; set aside.

1/4 cup extra virgin olive oil, plus
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
3 medium carrots, finely chopped
3 garlic cloves, minced
1 1/2 teaspoons ground cumin
1/4 teaspoon cayenne pepper
3/4 cup plain breadcrumbs
1/4 cup coarsely chopped fresh parsley leaves
2 large eggs, lightly beaten
1 tablespoon kosher salt
1/2 teaspoon fresh ground pepper
1 cup plain low-fat yogurt
1 teaspoon fresh lemon juice

Steps:
