Time 40m

Yield 2 serving(s)

Number Of Ingredients 6

1 (400 g) can chopped tomatoes
1 red bell pepper, deseeded and cut into quarters
1 red onion, finely chopped
1/4 pint vegetable stock
1 teaspoon paprika
1 teaspoon dried basil

Steps:

  • Grill the pepper skin side up until the skin is black.
  • Allow the pepper to cool and peel off the skin and roughly chop the flesh.
  • Place the pepper flesh, tomatoes, onion, stock, paprika and basil into a saucepan.
  • Simmer for 15 minutes.
  • Blend, strain, heat through gently and serve.

Tips:

  • Use ripe, flavorful tomatoes. This will give your soup the best possible flavor. If you can, use tomatoes that are in season and locally grown.
  • Roast the red peppers. Roasting the red peppers intensifies their flavor and gives them a slightly smoky taste that complements the tomatoes and onions.
  • Don't overcrowd the pot. If you add too many vegetables to the pot at once, they won't cook evenly. Cook the vegetables in batches if necessary.
  • Season the soup to taste. Add salt, pepper, and other spices to taste until the soup is flavorful but not too salty.
  • Serve the soup hot. Red pepper tomato onion soup is best served hot, with a sprinkle of grated Parmesan cheese or a dollop of sour cream.

Conclusion:

Red pepper tomato onion soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to use up leftover vegetables. With its vibrant color and flavorful taste, this soup is sure to be a hit with the whole family. So next time you're looking for a quick and easy soup recipe, give red pepper tomato onion soup a try.
