Categories     Garlic     Mustard     Potato     Side     Broil     Vegetarian     Backyard BBQ     Summer     Tailgating     Vegan     Bon Appétit

Number Of Ingredients 8

1 1/2 pounds small red-skinned new potatoes (about 1 to 1 1/2 inches in diameter), scrubbed, halved
3 tablespoons olive oil
3 tablespoons Dijon mustard
3 garlic cloves, minced
1 1/2 tablespoons finely chopped fresh rosemary
1/2 teaspoon coarse kosher salt
1/2 teaspoon coarsely ground black pepper
6 metal skewers or wooden skewers soaked in water 30 minutes

Steps:

  • Makes 6 servings. Line baking sheet with heavy-duty foil. Cook potatoes in large pot of boiling salted water just until tender when pierced with sharp knife, about 10 minutes. Drain; cool 10 minutes.
  • Meanwhile, whisk oil and next 5 ingredients in large bowl to blend.
  • Add potatoes to dressing and toss to coat. Thread potatoes onto skewers, cut side up. Place on prepared baking sheet. (Skewers can be assembled 4 hours ahead. Cover; let stand at room temperature.)
  • Preheat broiler, positioning rack 6 inches from heat source. Broil potato skewers until browned and bubbly, turning halfway through cooking time, about 10 minutes total.

Tips:

  • Choose the right potatoes: Red potatoes are ideal for this recipe because they hold their shape well when cooked. If you can't find red potatoes, you can use Yukon Gold potatoes instead.
  • Cook the potatoes until they are tender: The potatoes should be cooked until they are easily pierced with a fork. This will ensure that they are cooked through but still have a slight bite to them.
  • Use fresh garlic and mustard: Fresh garlic and mustard will give the skewers the best flavor. If you don't have fresh garlic, you can use jarred garlic. However, avoid using prepared mustard, as it will not have the same flavor as fresh mustard.
  • Serve the skewers hot or cold: These skewers can be served hot or cold. If you are serving them hot, be sure to let them cool slightly before eating. If you are serving them cold, you can chill them in the refrigerator for at least 30 minutes before serving.

Conclusion:

These Red Potato Skewers with Garlic and Mustard are a delicious and easy-to-make appetizer or side dish. They are perfect for parties, picnics, or potlucks. The combination of red potatoes, garlic, and mustard is a classic flavor combination that is sure to please everyone. So next time you are looking for a simple but flavorful dish, give these skewers a try. You won't be disappointed!
