3 -4 tablespoons butter, cubed
fresh chives, minced

Steps:

  • Bring a 2 quart sauce pot half full of water to a boil.
  • While water is coming to a boil dice potatoes to 1/4 inch cubes.
  • Add cubed potatoes to boiling water and cook on a slow boil until just fork tender (still firm).
  • Drain in a colander and return potatoes to pot.
  • Add butter cubes and gently stir until butter has melted.
  • Stir in minced chives and season to taste with salt and pepper.

1/2 cup heavy cream
8 tablespoons (1 stick) butter
A small handful chopped fresh chives (about 3 tablespoons)
A small handful roughly chopped basil leaves (about 2 1/2 tablespoons)

Steps:

  • Put the potatoes in a medium saucepan and pour in enough cold water to cover them by a couple of inches. Toss in a handful of salt. Bring the water to a boil and cook until the potatoes are tender when poked with a knife, about 25 minutes.
  • Drain the potatoes and return to the pan. Add the cream and butter and let the whole pot sit over very low heat until warmed through.
  • Add chives and basil to the pot with the potatoes and mash the potatoes coarsely. Season with salt and pepper.

  • Bring potatoes, salt and 6 cups water to a boil in a 4-quart saucepan over medium-high heat, stirring occasionally to ensure the salt has dissolved. Lower to a simmer, then cook until potatoes are tender, 18 to 20 minutes.

I made these tonight from a recipe found here on Zaar, but after changing enough of it, thought I would post how I made them. I am sure that you could use any other small potatoes, I just had red potatoes on hand!

1 lb red potatoes
1/3 cup butter, melted
3 large garlic cloves, crushed through a garlic press
2 tablespoons dried chives
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Wash the potatoes well and slice them halfway. If they are large enough, slice them in half again. Lay all the slices in a large baking pan.
  • Sprinkle the potatoes well with the seasonings.
  • Melt the butter. Crush the garlic cloves into the melted butter and stir them well in the butter. Let them sit for about 30 seconds or so.
  • Drizzle the garlic butter over the potatoes well and incorporate them all.
  • Bake in the uncovered dish for about 40 minutes or so, until they are tender and golden brown.
