Arugula and Romaine Salad with Red Grapes image

I looked into my refrigerator to see what I had...and the ingredients jumped to my imagination. I thought: I think this has to taste good and go well with my baked grouper dinner...and it was not only good but great! The mild bitterness of the arugula and the sweetness of grapes and pickled veggies is a perfect combination. A cool crisp pinot bianco is the perfect match.

SIMPLE ROMAINE SALAD

Simple Romaine Salad image

This is a take on a very simple and delicious salad I had at a Greek restaurant in NYC. It's so easy and the end result is super satisfying. Of course you can add your favorite herbs and toppings. But we find the lightly dressed salad is amazing and a great accompaniment to meat. Sprinkle with the salt right before serving; that pop of flavor and crunch is so good. Finishing salt is a must for this salad.

HERBED SPRING SALAD WITH EGG AND WALNUTS

Herbed Spring Salad With Egg and Walnuts image

This bright, herby, fresh-tasting salad makes a very nice accompaniment to a pan-fried breaded pork chop. Cooked beets (preferably golden) thinly sliced radishes, celery and turnips are dressed, then tossed with a mixture of zesty salad greens - use a combination of watercress, dandelion, curly endive, escarole, radicchio, mizuna, spinach, or red sorrel leaves. The components can be prepared in advance, but wait until the last minute before dressing and serving.

Time 20m

Yield 4 servings

Number Of Ingredients 17

2 tablespoons finely diced shallot
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar or sherry vinegar
3 tablespoons lemon juice, plus more to taste
1/2 teaspoon grated garlic (from 2 small cloves)
Kosher salt and black pepper
1/4 cup walnut oil or extra-virgin olive oil
6 ounces/4 cups lightly packed watercress or, preferably, a mixture of zesty salad greens
3 medium golden beets, cooked, peeled and cut in wedges
1/2 cup thinly sliced red radish (6 to 8 medium radishes)
1/2 cup thinly sliced turnip (or use small kohlrabi or watermelon radish)
1/2 cup thinly sliced celery heart, plus tender leaves (from the center of 1 celery head)
Kosher salt and black pepper
2 tablespoons roughly chopped dill
2 tablespoons tarragon leaves
4 (7-minute) boiled eggs
1 cup toasted walnut halves

Steps:

  • Make the vinaigrette: Put shallots in a small bowl. Add mustard, vinegar, 3 tablespoons lemon juice and the garlic. Stir together, and add a pinch of salt and pepper. Whisk in the walnut oil. Set aside for a few minutes, then taste and adjust lemon juice and salt.
  • Wash and dry the salad greens. Tear large leaves into smaller pieces, if desired. Wrap in a clean towel and refrigerate if not serving immediately.
  • Just before serving salad, put beet wedges in the bottom of a wide salad bowl. Add the radish, turnip and celery. Season with salt and pepper. Add dill, tarragon and half of the vinaigrette. Toss gently to coat.
  • Add the salad greens and combine to distribute sliced vegetables evenly. Cut eggs in halves or quarters, and arrange over salad. Scatter walnuts over the top. Drizzle with the remaining vinaigrette.

EGG AND POTATO SALAD WITH TARRAGON AND WALNUTS ON ROMAINE (COS)

Egg and Potato Salad With Tarragon and Walnuts on Romaine (Cos) image

Elegant and easy ladies' luncheon egg and potato salad with accents of tarragon and walnuts. Serve on arugula or romaine (aka Cos).

Provided by KateL

Categories     Potato

Time 42m

Yield 6 serving(s)

Number Of Ingredients 12

1/3 lb new potato, scrubbed and quartered
8 fresh extra large eggs
1/4 cup mayonnaise
1/4 cup plain yogurt
2 tablespoons Dijon mustard
3 tablespoons leeks or 3 tablespoons green onions, finely chopped
1 1/2 tablespoons fresh tarragon, finely chopped (or to taste)
2 teaspoons tarragon vinegar
1/4 teaspoon sea salt (to taste)
1/4 teaspoon white pepper (to taste)
6 leaves cos lettuce or 2 cups arugula leaves
1/4 cup walnuts, coarsely chopped

Steps:

  • In a large saucepan, over high heat, bring potatoes and enough water to cover to a boil. Reduce heat to low, and simmer 15-20 minutes. Drain potatoes, let cool to room temperature.
  • In a large saucepan, gently place eggs and fill with water to 1-inch above the eggs. Bring to a boil, then remove from heat and cover tightly for 15 minutes. Transfer eggs with a slotted spoon to a bowl of ice and cold water and let stand 5 minutes to cool. Peel eggs and coarsely chop.
  • Combine eggs and remaining salad ingredients in a large bowl with a wooden spoon, until well combined. Chill, covered tightly, until serving.
  • To serve, rinse lettuce of choice and spin dry or dry between paper towels. Arrange one leaf of romaine (Cos) on each salad plate (or divide arugula among the plates), then top with a scoop of the egg and potato salad. Sprinkle some chopped walnuts on top.

Tips:

  • Choose the right lettuce. Red romaine lettuce is the best choice for this salad, as it has a slightly bitter flavor that pairs well with the sweetness of the walnuts and eggs.
  • Use fresh ingredients. The fresher the ingredients, the better the salad will taste. If possible, use organic produce.
  • Don't overcook the eggs. The eggs should be cooked until they are just set, but not hard-boiled. This will give them a creamy texture.
  • Toast the walnuts. Toasting the walnuts will bring out their flavor and make them more crunchy.
  • Use a good quality dressing. The dressing is what brings all the flavors of the salad together. Use a dressing that is flavorful and complements the other ingredients.

Conclusion:

Red romaine salad with walnuts and eggs is a delicious and nutritious salad that is perfect for a light lunch or dinner. It is easy to make and can be made with ingredients that you probably already have on hand. So next time you are looking for a healthy and satisfying salad, give this one a try.
