Time 50m

Yield 8 servings

Number Of Ingredients 15

8 slices thick-cut bacon, chopped
1 small yellow onion, diced
1 bell pepper, diced
1 clove garlic, minced
1 1/2 cups packed brown sugar
1 cup brewed coffee
1 tablespoon ketchup
2 teaspoons mustard
1 teaspoon chile paste, such as sriracha
Kosher salt and freshly ground black pepper
Two 16-ounce cans pinto beans, drained
1/2 cup sour cream
1/2 cup grated Cheddar
1/4 cup sliced green onions
Butter crackers, such as Ritz, or tortilla chips, for serving

Steps:

  • Heat a Dutch oven over medium heat; line a plate with a paper towel. Add the bacon to the pot and cook, stirring occasionally, until crisp, 5 to 7 minutes. With a slotted spoon, transfer the bacon to the lined plate to drain.
  • Discard most of the bacon fat, leaving about 2 tablespoons in the pot. Return to medium heat, add the onion, bell pepper and garlic and saute until beginning to brown, about 3 minutes. Add the brown sugar, coffee, ketchup, mustard, chile paste and 1 teaspoon each salt and pepper, then add the beans and stir to combine. Bring to a simmer, then cover and cook until the sauce has thickened, 12 to 15 minutes.
  • Remove the pot from the heat and stir in the sour cream. Taste and adjust the seasoning as needed. Transfer the dip to a serving bowl and garnish with the Cheddar, green onions and reserved bacon. Serve with crackers or chips alongside.

Time 2h30m

Yield 18 servings

Number Of Ingredients 13

4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

Number Of Ingredients 11

4 cups dry pinto beans
1 pound thick-cut bacon, cut into pieces
2 whole green bell peppers, diced
1 whole onion, diced
1 cup brown sugar
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon chili powder, optional
2 teaspoons salt, more to taste
2 teaspoons black pepper, more to taste
4 cloves garlic, minced

Steps:

  • Rinse the beans under cold water, sorting out any rocks/particles. Set aside. In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.

Tips:

  • Soak the beans overnight: This will help to reduce the cooking time and make the beans more tender.
  • Use a variety of beans: This will give the baked beans a more complex flavor and texture. Some good options include pinto beans, kidney beans, black beans, and navy beans.
  • Use a flavorful liquid: The liquid you use to cook the beans will add a lot of flavor, so choose something flavorful like chicken broth, beef broth, or vegetable broth. You can also use water, but it will result in less flavorful baked beans.
  • Add some seasonings: Baked beans are a great opportunity to experiment with different seasonings. Some good options include salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper. You can also add fresh herbs like thyme, rosemary, or sage.
  • Don't overcook the beans: Overcooked beans will be mushy and bland. Cook them just until they are tender but still hold their shape.
  • Let the beans cool before serving: This will help the flavors to develop and will make the beans easier to handle.

Conclusion:

Baked beans are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover beans. With a few simple tips, you can make baked beans that are flavorful, tender, and perfect for any occasion.
