Time 10m

Yield 4 servings

Number Of Ingredients 16

For the salad:
2 cups mixed tender greens
2 medium, sweet Cara Cara oranges
1 small avocado, sliced thinly
¼ cup toasted hazelnuts, chopped (or almonds)
¼ cup pomegranate arils
--- black & white sesame seeds (optional)
For the vinaigrette:
5 TBSP. extra virgin olive oil
1 TBSP. white balsamic vinegar
2 TBSPS. fresh orange juice
1 TBSP. shallot, minced
½ tsp. honey
--- sea salt
--- freshly ground pepper
¼ tsp. finely grated lemon zest

Steps:

  • Peel the oranges with a sharp knife, removing as much of the pith as possible. Remove any seeds and slice the oranges very thinly. Peel and slice the avocado.
  • To make the vinaigrette, combine all the ingredients in a mason jar and shake well. Dip a piece of the greens into the mixture to taste and adjust the seasoning, if necessary.
  • Divide the salad greens among four plates (or use a large shallow bowl for group service). Place the sliced oranges and the avocado slices on top of the greens. Add the pomegranate arils and the toasted nuts. Sprinkle some sesame seeds on the avocado slices (if using).
  • Drizzle some of the vinaigrette over the salad or serve.

Tips:

  • Select the Freshest Citrus: Choose citrus fruits that are heavy for their size, with smooth, unblemished skin. Avoid fruits with bruises or soft spots.
  • Zest Before Juicing: Before juicing your citrus fruits, zest them first to capture their vibrant flavors and oils. This adds an extra layer of citrusy goodness to your salad.
  • Use a Variety of Citrus: Don't limit yourself to just one type of citrus. Mix and match different varieties, such as oranges, grapefruits, lemons, and limes, to create a colorful and flavorful salad.
  • Add Some Sweetness: Balance the tartness of the citrus with a touch of sweetness. Honey, agave nectar, or maple syrup are all great options.
  • Incorporate Herbs and Spices: Enhance the flavor of your salad by adding fresh herbs like mint, basil, or cilantro. A sprinkle of spices like cinnamon or ginger can also add a unique touch.
  • Don't Overdress the Salad: A light dressing is all you need to bring the flavors of your citrus salad together. Olive oil, lemon juice, and a touch of honey make a simple yet delicious dressing.
  • Serve Immediately: Citrus salads are best enjoyed fresh. Toss all the ingredients together just before serving to prevent the citrus fruits from losing their vibrant colors and flavors.

Conclusion:

A refreshing citrus salad is a delightful combination of tangy, sweet, and aromatic flavors. It's a perfect side dish for grilled meats or fish, or it can be enjoyed as a light and healthy meal on its own. With its vibrant colors and invigorating flavors, this salad is sure to brighten up your table and tantalize your taste buds. So next time you're looking for a simple yet impressive dish, give this citrus salad a try. Experiment with different citrus varieties, herbs, and spices to create your own unique and delicious salad.
