REFRESHING LAVENDER CORDIAL
A pleasantly refreshing, calming & restorative drink with an exquisite flavour. It's ideal on a hot summer's day, and is delicious when mixed with sparkling water or, even champagne/sparkling wine! Make sure the lavender has not been sprayed with insecticides and rinse gently under cold running water (to dislodge any insects) before use. Alternatively you can buy culinary lavender from herbalists or specialist shops.

Tips:
- Carefully select your lavender: Use culinary lavender or English lavender for the best flavor. Avoid using wild lavender, as it can be bitter and have a medicinal taste.
- Harvest lavender at the right time: The best time to harvest lavender for cordial is when the flowers are just starting to open. This is usually in early to mid-summer.
- Use fresh, organic lemons: Fresh lemons will give your cordial a brighter flavor. Organic lemons are preferred, as they are less likely to contain pesticides or waxes.
- Dissolve sugar slowly: To prevent crystallization, dissolve the sugar slowly in the hot water. Stir constantly until the sugar is completely dissolved.
- Let the cordial cool completely before bottling: This will help to preserve the flavor and prevent spoilage.
- Store the cordial in a cool, dark place: The cordial will keep for up to 6 months in a cool, dark place. Once opened, it should be kept in the refrigerator and consumed within 2 months.
Conclusion:
Lavender cordial is a refreshing and flavorful drink that can be enjoyed on its own or used in cocktails and mocktails. It is also a great way to use up fresh lavender from your garden. With a few simple ingredients and a little bit of time, you can easily make your own delicious lavender cordial at home.
