Adapted from a recipe in the BH&G Biggest Book of Slow Cooker Recipes. Use a 6 qt crock pot for stated amounts. Halve amounts for a 3.5 qt cooker. Can also be made on the stove top or simmered in a slow oven. Freezes beautifully.

1 1/4 lbs ground turkey
1 cup onion, chopped
2 (15 ounce) cans chili beans
1 (16 ounce) jar thick & chunky salsa (use desired heat level)
1 (16 ounce) can refried beans
1 (14 ounce) can beef broth (or 1 12 oz. bottle beer)
2 tablespoons chili powder (use desired heat level)
1 tablespoon ground cumin

Steps:

  • Brown ground turkey and onion until meat is brown and onion is tender. Drain off fat and add to meat and onion to crock.
  • Add remaining ingredients to crock and mix well.
  • Cook on low 6 to 8 hours or high for 3 to 4 hours.
  • Garnish as you desire. We usually set out shredded cheese, chopped onions and sour cream.

3 cups vegetable or beef broth
2 tablespoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon pepper
Dash salt (if desired)
1 (15-ounce) can black beans (rinsed and drained)
1 (15-ounce) can navy beans (rinsed and drained)
1 (15-ounce) can kidney beans (rinsed and drained)

Steps:

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion and garlic; cook and stir until tender, about 5 to 6 minutes.
  • Stir in the refried beans, diced tomatoes, tomato paste, and 1 cup of the broth; stir until beans and tomato paste dissolve.
  • Stir in the remaining broth along with the chili powder, cumin, pepper, and salt if using.

1 onion , sliced
2 peppers , sliced
2 garlic cloves , crushed
1 tbsp ground cumin

2 tsp hot smoked paprika
400g can chopped tomatoes
400g can mixed beans , drained
400g can black beans , drained
pinch of sugar
250g brown rice
½ small bunch coriander , chopped
soured cream or guacamole, to serve (optional)

Steps:

  • Heat the oil in a casserole dish and fry the onion and peppers for 10 mins over a medium heat until the onion is golden brown. Add the garlic and spices, and fry for 1 min. Pour in the tomatoes, both cans of beans, 50ml water, then add the sugar and season. Simmer, stirring regularly, for 15-20 mins until thickened.
  • Meanwhile, cook the rice following pack instructions. Serve the chilli on the rice and scatter over the coriander. Top with a spoonful of soured cream, or guacamole, if you like.

2 onions, chopped
2 celery sticks, finely chopped
2 yellow or orange peppers, finely chopped
2 tbsp sunflower oil or rapeseed oil
2 x 460g jars roasted red peppers
2 tsp chipotle paste
2 tbsp red wine vinegar
1 tbsp cocoa powder
1 tbsp dried oregano
1 tbsp sweet smoked paprika
2 tbsp ground cumin
1 tsp ground cinnamon
2 x 400g cans chopped tomatoes
400g can refried beans
3 x 400g cans kidney beans, drained and rinsed
2 x 400g cans black beans, drained and rinsed

Steps:

  • Put the onions, celery and chopped peppers with the oil in your largest flameproof casserole dish or heavy-based saucepan, and fry gently over a low heat until soft but not coloured.
  • Drain both jars of peppers over a bowl to catch the juices. Put a quarter of the peppers into a food processor with the chipotle paste, vinegar, cocoa, dried spices and herbs. Whizz to a purée, then stir into the softened veg and cook for a few mins.
  • Add the tomatoes and refried beans with 1 can water and the reserved pepper juice. Simmer for 1 hr until thickened, smoky and the tomato chunks have broken down to a smoother sauce.
  • At this stage you can cool and chill the sauce if making ahead. Otherwise add the kidney and black beans, and the remaining roasted peppers, cut into bite-sized pieces, then reheat. (This makes a large batch, so once the sauce is ready it might be easier to split it between two pans when you add the beans and peppers.) Once bubbling and the beans are hot, season to taste and serve.
