Tips:

  • To make the refried beans, you can use canned or cooked dried beans. If using canned beans, rinse and drain them well before mashing.
  • For a smoother refried bean filling, use a food processor or blender to puree the beans until they are very smooth.
  • If you don't have any enchilada sauce on hand, you can make your own by simmering tomatoes, onions, garlic, and chili peppers in a saucepan until the sauce has thickened.
  • To prevent the enchiladas from sticking to the pan, grease it lightly with cooking spray or oil before assembling the enchiladas.
  • If you are using a lot of cheese, it is a good idea to pre-shred it before assembling the enchiladas. This will save you time and help the cheese melt evenly.
  • To make sure the enchiladas are cooked through, bake them for at least 20 minutes, or until the cheese is melted and bubbly.

Conclusion:

Refried bean enchiladas are a delicious and easy-to-make meal that can be enjoyed by people of all ages. They are perfect for a weeknight dinner or a casual party. With a few simple ingredients and a little bit of time, you can create a tasty and satisfying meal that your family and friends will love.
