Whenever I have leftover mashed potatoes, this is the recipe I think of first. Not only does it use up leftovers, it's convenient when you need to have supper ready quickly. The men in my family especially enjoy this casserole.

3 to 4 cups mashed potatoes
1 can (16 ounces) sauerkraut, rinsed and drained
4 green onions, sliced
2 cups diced cooked corned beef
1 cup shredded Swiss cheese
Paprika

Steps:

  • Warm potatoes slightly to soften them. Place in a bowl with sauerkraut and green onions; mix well. Spoon two-thirds into a greased 3-qt. baking dish. Cover with he corned beef and cheese. Top with remaining potato mixture. Sprinkle with paprika. Bake, uncovered, at 350° for 30 minutes or until heated through.

2/3 cup condensed cream of mushroom soup, undiluted
1/3 cup 2% milk
2 tablespoons chopped onion
3/4 teaspoon prepared mustard
1 can (8 ounces) sauerkraut, rinsed and well drained
1/3 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1/2 cup shredded Swiss cheese
3 tablespoons soft whole wheat bread crumbs
1-1/2 teaspoons butter, melted

  • Cook noodles according to package directions. Meanwhile, in a small bowl, combine the soup, milk, onion and mustard; set aside., Spread sauerkraut into a 1-qt. baking dish coated with cooking spray. Drain noodles; place over sauerkraut. 1 (16 ounce) can sauerkraut, drained and rinsed
1 pound deli sliced corned beef, cut into strips
¾ cup Russian-style salad dressing
2 cups shredded Swiss cheese

  • Preheat oven to 400 degrees F (200 degrees C).

1 ½ cups thousand island dressing
1 cup sour cream
1 tablespoon minced onion
6 slices dark rye bread, cubed
6 slices light rye bread, cubed
1 pound sauerkraut, drained
1 ½ pounds corn beef, cut into bite-size pieces
2 ½ cups shredded Swiss cheese
¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, mix the thousand island dressing, sour cream, and onion.
  • Arrange the dark and light rye bread cubes in the bottom of the prepared baking dish, reserving about 1/2 cup each for topping. Layer the bread with sauerkraut and corned beef. Spread the dressing mixture over the corned beef. Sprinkle with Swiss cheese, top with remaining bread cubes, and drizzle with margarine.
  • Cover, and bake 15 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.

2 cups chopped cabbage
1/2 cup chopped onion
5 ounces corned beef, chopped
1/4 teaspoon caraway seed
1/3 cup shredded swiss cheese
1 tablespoon thousand island dressing
1 (5 ounce) can ready-to-bake refrigerated buttermilk flaky biscuits

Steps:

  • Preheat oven to 375 degrees.
  • In a medium skillet, melt butter and stir in cabbage, onion and caraway seeds.
