Steps:
- Preheat oven to 375 degrees.
- In a bowl, combine corned beef, sauerkraut, one cup of cheese, dressing, parsley and garlic; mix well.
- Take the crescent rolls and separate them into the triangles. Arrange one can of the triangles so they look like a sun with the fatter side in the middle and the shinny part of the triangle pointing out. Then take the second can of rolls and separate into triangles. Place one triangle in between two triangles so that it looks like a very full sun. All skinny parts are on the outside and all fat parts are on the inside.
- Scoop filling evenly over the thick inner part of the sun. Then take the skinny points and fold them over tucking the ends in the thicker part of the dough. This should create a circle (ring) stuffed with the ingredients.
- Brush top with egg.

Mix remaining ingredients beat vigorously 30 seconds. Spread 2 cups of the batter in bottom and about 2 inches up side and center of pan. Sprinkle cheese over batter in pan. Spoon reuben mixture evenly onto center of batter. Drop remaining batter by teaspoonfuls about 1/2 inch apart onto corn beef mixture.Spread slightly to connect. Bake until light brown and firm, about 25 minutes. Invert on heatproof serving plate.
Tips:
- Choose the right bread. A good Reuben sandwich starts with a sturdy bread that can hold up to the fillings. Look for a bread that is slightly sour, dense, and has a good crust. Some popular choices include rye bread, pumpernickel bread, and sourdough bread.
- Use high-quality ingredients. The quality of your ingredients will make a big difference in the taste of your sandwich. Look for thinly sliced corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing. You can also add other toppings, such as thinly sliced red onion, pickles, or horseradish.
- Assemble the sandwich correctly. Start by spreading a thin layer of Thousand Island dressing on one slice of bread. Then, layer on the corned beef, Swiss cheese, sauerkraut, and any other toppings you are using. Top with the remaining slice of bread and spread with more Thousand Island dressing.
- Grill the sandwich until golden brown. Heat a large skillet or griddle over medium heat. Add the sandwich and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly. You can also grill the sandwich in a panini press.
- Serve immediately. A Reuben sandwich is best served hot and fresh. Serve with a side of your favorite sides, such as potato chips, coleslaw, or potato salad.
