FABULOUS FIBER CHOCOLATE CHIP COOKIES

Fabulous Fiber Chocolate Chip Cookies image

I invented these cookies because I wanted a healthier version of the good old chocolate chip cookies...They are brown (due to the flaxseed meal), crisp on the outside but softer on the inside...and very flavorful. They turned out really nice and everyone liked them. Enjoy!

Time 30m

Number Of Ingredients 10

1 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups flax seed meal
1/4 cup oats
1/4 cup packed light brown sugar
1/2 cup granulated sugar
1/2 cup butter (room temperature)
2 egg whites
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350°. Line a cookie sheet with parchment paper.
  • In a small bowl combine first 5 ingredients (dry ingredients).
  • In a larger bowl beat sugars and butter until fluffy, then add egg white and dry ingredients, beat well.
  • Stir in chocolate chips.
  • Shape into little balls (I used my hands, but you could also use tablespoons I guess) and place on baking sheets. Press down with the palm of your hand (they won't spread, so press them as flat as you like your cookies).
  • Bake for 15-20 minutes (I baked them for 18 and liked them that way).

Time 20m

Yield 24 cookies/bars, 24 serving(s)

Number Of Ingredients 7

1 (18 1/3 ounce) box fudge brownie mix
2 cups Fiber One cereal
1/3 cup semi-sweet chocolate chips
1/4 teaspoon cinnamon
1/4 cup water
1/2 tablespoon vanilla
1/4 cup egg substitute

Steps:

  • Preheat oven to 350.
  • Mix together everything except brownie mix and chocolate chips. I have found that it works best to let the Fiber One cereal absorb so of the liquid beforehand to soften the cereal up. I usually let it soak for about 5 minutes, but the longer the better.
  • Add in brownie mix, then chocolate chips.
  • Drop on to greased cookie sheet or pour into greased pan for brownies.
  • Bake for about 10 minutes, sometimes a little less, as to prevent them from drying out too much.
  • Adding raisins and/or peanuts to the mix is great however it adds to the calorie count as well.

Tips:

  • Use room temperature butter. This will help the cookies spread and bake more evenly.
  • Measure your flour correctly. Too much flour can make the cookies dry and crumbly. To measure flour correctly, spoon it into the measuring cup and level it off with a knife.
  • Don't overmix the dough. Overmixing can make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at the right temperature. The cookies should be baked at 350 degrees Fahrenheit for 10-12 minutes, or until they are golden brown on the edges.

Conclusion:

These revamped Fiber One chocolate cookies are a delicious and healthy snack that can be enjoyed by people of all ages. They are made with wholesome ingredients like oats, peanut butter, and honey, and they are packed with fiber and protein. These cookies are also easy to make, and they can be customized to your liking. So next time you are looking for a healthy snack, give these revamped Fiber One chocolate cookies a try.
