1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 cup brown sugar
1/2 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla
2 cups chopped rhubarb
1/2 cup chopped pecans (optional)
1 cup icing sugar (powdered sugar)
4 -5 teaspoons lemon juice

Steps:

  • Preheat oven to 350°F.
  • Lightly spray the bottom of an 8 x 4 loaf pan.
  • Stir flour with baking soda and salt in a small bowl. In another, larger, bowl whisk egg, brown sugar, buttermilk, oil and vanilla together until blended. stir in the flour mix.
  • Add rhubarb and pecans (if using) and stir just until combined. Scrape into the prepared pan.
  • Bake in center of oven for 70 - 75 mins or until a tester inserted into cake center comes out clean. Cool in pan for 10 minutes Remove from pan.
  • While cake is cooling in the pan stir icing sugar with lemon juice in a small bowl, adding the juice 1 tsp at a time until thick and smooth. Drizzle the glaze over the warm cake when it's removed from the pan letting the glaze run down the sides.

1 cup firmly packed brown sugar
1 cup white sugar, divided
½ cup shortening
1 large egg
2 cups all-purpose flour
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
1 ½ cups chopped rhubarb
½ cup chopped pecans
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch pan.
  • Cream brown sugar, 1/2 cup white sugar, and shortening together in a mixing bowl. Beat in egg. Add flour, buttermilk, baking soda, vanilla extract, and salt. Fold in rhubarb. Pour mixture into the prepared baking pan.

2 cups diced fresh or frozen rhubarb
1/4 cup plus 2/3 cup sugar, divided
1/2 cup butter, softened
2 large eggs
1-1/2 teaspoons vanilla extract

1/2 teaspoon salt
1/8 teaspoon baking soda
3/4 cup buttermilk
2 tablespoons brown sugar

Steps:

1/2 teaspoon coarse salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 stick (1/2 cup) unsalted butter, room temperature, plus more for pans
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup sour cream
8 ounces rhubarb, cut into 1/4-inch dice (2 cups)
1 vanilla bean, halved lengthwise
1 cup water
1 cup granulated sugar
4 ounces rhubarb, cut into 1/4-inch dice (1 cup)
Whipped cream, for serving

Steps:

  • For the cakes: Preheat oven to 350 degrees. Butter eight 4-by-2 1/2-inch mini loaf pans. Line with parchment cut to fit. Butter parchment. Whisk together flour, salt, baking powder, and baking soda.
  • Beat butter and sugar with a mixer on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Reduce speed to low. Add flour mixture in 2 additions, alternating with sour cream. Stir in rhubarb.
  • Divide batter among pans. Place on a rimmed baking sheet. Bake until a toothpick comes out clean, about 40 minutes. Remove from sheet, and let cool in pans on a wire rack. (Cakes can be stored in airtight containers for up to 3 days.)
  • For the rhubarb and syrup: Using the tip of a paring knife, scrape vanilla seeds into a saucepan, reserving pod for another use. Add water and sugar, and bring to a simmer, stirring to dissolve sugar. Remove from heat, and stir in rhubarb. Let cool. Remove rhubarb with a slotted spoon, and reserve. Return liquid to a simmer, and cook until reduced by half, 5 to 8 minutes. Let cool slightly, then return rhubarb to syrup. (Rhubarb can be refrigerated in syrup for up to 1 week; bring to room temperature or gently reheat before serving.)
  • To serve, spoon a generous amount of whipped cream over each cake, and top with rhubarb and syrup.

1/4 teaspoon salt
1 1/4 cup granulated sugar, more for sprinkling
1/2 teaspoon baking soda
1 stick (4 ounces) butter, cut into pieces, at cool room temperature
2 eggs
1/2 cup buttermilk
1 1/2 pounds (about 8 stalks) rhubarb, thinly sliced
Light brown sugar and softly whipped cream, for serving

Steps:

  • Heat oven to 350 degrees. In a bowl, sift flour, salt, 3 tablespoons sugar and the baking soda together. With fingers, rub in butter until mixture is sandy. Beat 1 egg and add to flour mixture. Add buttermilk and blend just until mixture forms dough; it will be quite stiff and sticky. Turn out onto a floured work surface and divide in two. Roll out each piece to fit a 10-inch round baking dish. Line bottom of pan with one round, pinching together any tears.
  • Cover dough with rhubarb and sprinkle rhubarb evenly with 1 heaping cup sugar. Place second pastry round on top and pinch edges together. Pinch together any holes. Beat remaining egg with 1 teaspoon water and brush it on dough.
  • Place a baking sheet in oven to catch drips, and place baking dish on it. Bake until crust is golden and rhubarb is soft and juicy, about 1 hour. Immediately sprinkle with granulated sugar. Serve warm, with a sprinkle of brown sugar and whipped cream on each serving.

2 cups all-purpose flour or 2 cups rice flour
2 teaspoons baking soda
1 teaspoon allspice
1 teaspoon salt
1 cup sugar or 1 cup honey
1/2 cup Crisco shortening
3 teaspoons white vinegar
2 cups milk
2 large eggs, beaten
4 drops red food coloring
2 teaspoons vanilla
4 cups cut fresh rhubarb (cut in 2 inch pieces) or 4 cups frozen rhubarb, thawed (cut in 2 inch pieces)
Pam cooking spray

Steps:

  • Use a 4 cup glass Pyrex measuring cup and add 2 cups milk, and the vinegar. Stir; set aside.
  • In mixing bowl add flour, allspice, baking soda, salt and sugar. If using honey do not add yet.
  • Add Crisco and cut in so mixture resembles crumbs.
  • Now fold in honey. Do not use both sugar and honey.
  • Drop eggs into Pyrex measuring cup and whisk until beaten and mixed.
  • Add food coloring and vanilla.
  • In large mixing bowl, add egg milk mixture.
  • Add dry mixture with either sugar or honey a little at a time until all mixed. Now add rhubarb. If frozen and then thawed, drain the liquid. Add more food coloring if you want the color more intense.
  • Preheat oven 350°F.
  • Spray Pam into large Bundt pan.
  • Spoon cake batter in the pan.
  • Bake 55 minutes until top springs back with a touch and sides shrink away from pan.
  • Cool ten minutes and invert on serving dish.
  • Sauce:.
  • 1/2 cup butter or margarine, 1/4 cup honey, 2 tsp cinnamon and 3 Tbsp evaporated milk.
  • In microwavable bowl, add all ingredients, microwave 70% power for 2 minutes, remove from oven and stir.
  • Serve with cake if desired.
  • This cake freezes very well, double wrapped.
