6 cups peeled and chopped rhubarb
¾ cup white sugar
7 tablespoons unsalted butter, softened
⅓ cup white sugar
2 cups all-purpose flour
2 tablespoons white wine
2 teaspoons baking powder
1 large egg
1 cup almond flour
¾ cup creme fraiche
2 tablespoons creme fraiche
⅔ cup white sugar
2 large eggs
2 teaspoons vanilla sugar
1 teaspoon ground cinnamon

Steps:

  • Combine rhubarb and sugar for topping in a large bowl. Mix to combine and set aside for about 1 hour to allow the rhubarb to draw juice.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform cake pan.

RHUBARB CUSTARD CAKE

Rhubarb Custard Cake image

Delicious easy rhubarb recipe, the best rhubarb cake recipe I've ever eaten! It is great warm out of the oven, and then I refrigerate the leftover cake, and it is wonderful cold, too! The cream, sugar and rhubarb sink to the bottom, forming a custard layer.

Time 1h5m

Yield 18 serving(s)

Number Of Ingredients 7

1 (18 1/4 ounce) yellow cake mix
1 1/3 cups water, for cake mix
1/2 cup vegetable oil, for cake mix
3 eggs, for cake mix
4 cups rhubarb, chopped
1 cup granulated sugar
1 pint heavy cream

Steps:

  • Prepare batter for cake mix according to package directions; turn into greased and floured 9 x 13 pan.
  • Dump the chopped rhubarb on top of the cake batter.
  • Sprinkle the sugar on the top of the rhubarb.
  • Pour the heavy cream over the sugar.
  • Bake at 350°F for 50-60 minutes, until cake springs back when lightly touched.

Tips:

  • Choose the right rhubarb. Look for rhubarb stalks that are firm and plump, with deep red or pink color. Avoid stalks that are wilted or have brown spots.
  • Prepare the rhubarb properly. Rinse the rhubarb stalks thoroughly and trim off the leaves and ends. Cut the stalks into small pieces, about 1 inch in length.
  • Use fresh custard. For the best results, use fresh custard made from scratch. You can find recipes for custard online or in cookbooks.
  • Don't overcook the cake. The cake is done when a toothpick inserted into the center comes out clean. Overcooking will make the cake dry and crumbly.
  • Let the cake cool completely before serving. This will allow the custard to set and the flavors to develop.

Conclusion:

Rhubarb custard cake is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and tart flavor and creamy custard filling, this cake is sure to be a hit with everyone. So next time you're looking for a special treat, give rhubarb custard cake a try. You won't be disappointed!
