6 ounces chicken rice-a-roni
10 ounces cream of chicken soup
8 ounces low-fat sour cream
1 rotisserie-cooked chicken
6 ounces French-fried onions

Steps:

  • Preheat oven to 350°F Prepare Rice-A-Roni according to package directions. While that is cooking, shred/cut up the chicken removing meat from bones.
  • When Rice-A-Roni is done, add the can of soup and the sour cream, and stir to combine. Add the chicken and mix together. Spread mixture into a sprayed baking dish and bake, uncovered, at 350 F for 40 minutes.
  • Remove from oven, cover with the french-friend onions and bake for 5 more minutes.

You can find the short pieces of vermicelli in little bags by the Mexican food in most grocery stores, or you can bust up spaghetti noodles into 2 inch pieces. I buy the big cans of gravy mix, they last forever and are much cheaper than the little packets. I also keep frozen diced onions in my freezer for stuff like this.

3/8 cup rice
3/8 cup vermicelli
2 tablespoons butter
2 cups water
2 tablespoons chicken gravy mix
1 tablespoon onion
1 teaspoon dried parsley

  • I make the noodle / rice blend up in a big batch ahead of time, and then measure out 3/4 cup when I want to use it. Simply mix equal amounts of noodles and rice. To make a single serving, I pour rice halfway to the 3/4 mark in my pyrex measuring cup, and then fill it the rest of the way with the pasta. Very easy.
  • Heat the butter in a skillet. Add 3/4 cup of the rice/noodle mix, and brown, stirring frequently for a minute or two.
  • Add the water, gravy mix, onion, and parsley. Heat to boiling, reduce heat, cover and simmer 15 minutes.

1 (6 7/8 ounce) package Rice-A-Roni, spanish rice flavor (not the "Mexican" flavor one as its a little different and you need the "Spanish Rice" flavor one fo)
1 (16 ounce) salsa (or you can use 2 tomatoes chopped or 1 14.5 oz can of diced tomatoes in juice, undrained)
2 cups white chunk chicken from canned tyson chicken
1 (15 ounce) can can pinto beans, drained
1 (15 ounce) can corn, drained
8 (6 inch) flour tortillas, warmed
shredded cheddar cheese, sour cream and avocado for topping

Steps:

  • Melt margarine and saute vermicelli mix until golden brown.
