1/4 cup olive oil
3 cups diced ( 1/2 inch) onion (about 3/4 pound)
1 cup diced ( 1/2 inch) celery (about 3 ribs)
3/4 cup diced ( 1/2 inch) scallion (6 to 8 scallions)
2 pounds cleaned squid, cut into 1-inch pieces
2 cups Thai rice (about 14 ounces), available in some supermarkets and most Asian specialty food stores
2 cups diced ( 1/2 inch) ripe tomato
6 to 8 cloves garlic, peeled and chopped (about 1 1/2 tablespoons)
1 2-inch piece fresh ginger, peeled and chopped (about 1/4 cup)
Peel of 1 lemon, removed with a vegetable peeler
1 or 2 Thai peppers (amount depending on pepper size and desired hotness), chopped
2 teaspoons salt, plus additional to taste
Tabasco red pepper sauce (optional)

Steps:

  • In a large, sturdy saucepan, heat the oil until hot but not smoking. Add the onion, celery and scallion, and cook for 2 to 3 minutes, stirring occasionally. Add the squid and rice, and mix well.
  • Stir in the tomato, garlic, ginger, lemon peel, Thai pepper and salt, along with 2 1/2 cups warm tap water. Bring the mixture to a boil, stirring occasionally so it doesn't stick. When it comes to a full boil, reduce the heat to very low, cover, and cook for 20 minutes.
  • Let the mixture rest for 5 to 10 minutes before serving. If desired, pass additional salt and Tabasco sauce.

1 1/2 pounds squid, with tentacles
4 tablespoons olive oil
1 large onion, chopped
1 pimento, chopped
1 tomato, chopped
2 cloves garlic, minced
1 tablespoon minced parsley
Coarse salt and freshly ground pepper to taste
Large pinch saffron
1/2 pod chili pepper, seeds removed, crumbled
1/4 to 1/2 cup dry red wine
2 cups short-grain rice
3 to 4 cups fish broth or clam juice
1 pimento, cut in strips
Garlic sauce
3 cloves garlic, crushed
1/2 cup extra-virgin olive oil

Steps:

  • Clean the squid, reserving the ink sacks and the tentacles. Cut the squid into half-inch wide rings or into pieces. Chop the tentacles.
  • In a wide, shallow casserole, preferably earthenware and about 12 inches across, heat the oil and saute the onion until it is wilted. Add the squid rings and tentacles and saute five minutes, then add the chopped pimento, garlic, tomato, parsley, salt, pepper, saffron and chili pepper. Cover and simmer 30 minutes.
  • Break the ink sacs in a cup and mix with the wine. Pass this mixture through a sieve several times until most of the ink is extracted. Reserve. Add the rice and broth, boiling hot, to the casserole and stir in ink mixture. Season with salt and pepper. Bring to a boil and cook over medium-high heat, uncovered, and stirring occasionally, for 10 minutes, until the rice is no longer soupy but some liquid remains. Decorate with the pimento strips and transfer to a 325-degree oven. Bake 15 minutes, uncovered, until the liquid is absorbed but the rice is not quite done. Remove from the oven, cover lightly with foil and let sit 10 minutes.
  • While the rice is resting, make the garlic sauce. Place the crushed garlic in a processor or blender. Very gradually, with the motor running, pour in the oil. Serve the rice with a salad and a dry white wine like Cepa de Oro. Pass the garlic sauce separately.

Also known as "Crna Riz" or "black rice", this recipe is traditionally a risotto made with squid ink, and wine. This alcohol free version is much easier to prepare, and is a great way to introduce kids to squid.

2 1/2 lbs small squid, frozen
2 lbs yellow onions, diced
5 garlic cloves, crushed
5 tablespoons extra virgin olive oil
1/2 cup parsley, chopped
1 cup rice
1 3/4 cups water
romano cheese, grated
1 teaspoon salt
1/2 teaspoon pepper, freshly ground
2 tablespoons vinegar

Steps:

  • Buying Squid. For the best taste, and tenderest squid, you need the freshest squid possible so we recommend you start with a 3 lb box of uncleaned, whole frozen squid. Frozen squid is flash frozen as soon as it's caught, and will produce better results than "fresh" squid, which has usually been frozen and thawed for a longer time. Frozen supermarket squid is also a lot less expensive. Check that the box is not bulging on one end, indicating it was thawed and refrozen.
  • Thaw the squid by wrapping the box in plastic wrap, and submerging in tepid to warm water for a couple of hours. The thawed squid should smell fresh, and there should be no need to rinse.
  • Clean by pulling the head and guts from the body, and pulling out the quill. On fresh squid, the quill will pull out easily, in one piece. Any milky or translucent substance left in the body is roe, and can be eaten. Cut the bodies into 3/4 inch squares.
  • Clean the tentacles by squeezing the heads to push in the beak, and cutting away the beak, guts and eyes from the tentacles. For "black" rice, remove the ink sacs from several of the larger squid, and slit open to remove the ink. Add to the skillet at the same time as the squid.
  • Cook Rice. Traditionally this is a risotto, however this can result in overcooked squid, so we recommend pre-cooking the rice. Bring rice and water to a boil, then lid tightly and leave on low heat for 20 minutes. The rice should be added to the squid while still hot.
  • Fry onion In some oil in a heavy 12" skillet, until they start to turn golden.
  • Add crushed garlic and cook for one minute or until fragrant.
  • Add squid (and optional ink) & parsley. Stir on high heat until squid turns white, and then another minute. This will take about 6-10 minutes, depending on how hot your stove is. Do not overcook! Properly cooked squid will be white, and very tender.
  • Remove from heat, season with salt and pepper, and stir in hot rice. Finish with extra virgin olive oil and vinegar. Check seasoning.
  • This can be served thick, as a main course for or side dish for 10, or with added stock, as a soup. Garnish with grated Romano cheese.

BLACK RICE WITH SQUID

1 lb 5 oz fresh squid, cleaned
8 cups fish stock
1/3 cup olive oil
1/2 cup sofrito
3 cups paella rice
3/4 oz squid ink (optional)
2 tbsp picada

Steps:

  • If the squid has tentacles, pull them away from the body. Cut the squid into 1-inch strips. Then cut into 1-inch cubes. Pour the fish stock into a saucepan, cover, and bring to a simmer. Put a large pan over high heat and add the oil. Add the squid. Fry for 2 minutes, until golden in places. Add the sofrito and continue to cook over medium heat for 10 minutes. Add a teaspoon of water if the sofrito starts to stick to the bottom of the pan. Add the rice, stirring it into the squid. Fry for 10 minutes, stirring often. Turn the heat to high and add a ladle of stock, stirring continuously. Once the stock has been absorbed, add another ladle and repeat until 5 minutes have passed. Dissolve the squid ink in a little of the remaining stock. Add this to the rice, and then continue adding the rest of the stock. Cook the rice for another 12 minutes, stirring frequently. Add the picada and continue to cook for another 2 minutes, or until the rice has absorbed most of the liquid and is just tender to the bite. Season with salt, then serve.

SMOKY PAPRIKA SEAFOOD RICE

Savoury smoked paprika gives a real lift to this healthy yet impressive paella-style dish with prawns, baby squid and mussels

1.3l fish or chicken stock
large pinch of saffron (optional, see tip)
4 tbsp olive oil
4 garlic cloves , 1 left whole, 3 finely chopped
12 large prawns , shells on
4 baby squid (about 250g), cleaned and sliced
1 onion , very finely chopped
2 celery sticks , very finely chopped
1 tsp fennel seeds , lightly crushed
2 tbsp tomato purée
1 tsp smoked paprika (hot or sweet)
300g paella rice
250ml fino sherry or dry white wine
300g fresh mussels , cleaned (discard any that are open)
large handful parsley , roughly chopped
1 lemon , cut into wedges, to serve

Steps:

  • Heat the stock in a large saucepan. Add the saffron to infuse, if you like. Take off the heat and set aside. In a large deep-sided frying pan or paella pan, heat 1 tbsp of the oil. Smash the whole garlic clove and add to the oil. Throw in the prawns and cook for 2 mins until just turning pink but not cooked through. Push to one side of the pan and add the squid to the garlicky oil for 1 min or so, again just to colour. Remove the seafood to a plate.
  • Add the remaining oil to the pan, and cook the onion and celery slowly for 15 mins until very soft and beginning to caramelise. Add the finely chopped garlic, the fennel seeds, tomato purée and paprika, and cook for 5 mins more. Meanwhile, bring the stock to a simmer. Add the rice to the pan with the onion mixture, give everything a good stir, then add the sherry and 1 litre of the hot stock. Bring to the boil and simmer gently for 15 mins, shaking the pan from time to time.
  • When the rice is almost cooked but still has a little bite, dot over the prawns, squid and the mussels. Add the cooking juices and the rest of the stock. Cover and cook for 5 mins until the seafood is cooked through, the mussels have opened and the rice is just tender. (You may have to add a splash more water if the rice looks dry.) Discard any mussels that haven't opened. Sprinkle over some chopped parsley and serve with lemon wedges to squeeze over.
