Time 12m

Yield 1 cup

Number Of Ingredients 4

60 g butter
2 tablespoons liquid glucose
3/4 cup brown sugar (firmly packed)
1/2 cup heavy cream

Steps:

  • Combine butter, glucose and sugar in small saucepan, stir over a low heat until sugar is dissolved, brush sides of saucepan down with a brush dipped in water to make sure all sugar grains are dissolved.
  • Increase heat bringing to the boil, DO NOT STIR, boil gently for 4 to 5 minutes or until mixture begins to darken in colour.
  • Remove from heat, allow bubbles to subside, gradually stir in cream.
  • Sauce thickens on standing, when cold transfer to a jar or air tight container and store in the refrigerator.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the sauce will taste. Use real butter, heavy cream, and pure vanilla extract.
  • Cook the sugar slowly: Don't rush the process of melting the sugar. Cook it over low heat, stirring constantly, until it reaches a deep amber color.
  • Be careful not to burn the sugar: If the sugar starts to smoke, remove it from the heat immediately. If you burn the sugar, you'll have to start over.
  • Add the cream and butter gradually: Once the sugar has reached the desired color, slowly whisk in the cream and butter. Be careful not to add them all at once, or the sauce will curdle.
  • Stir constantly: Stir the sauce constantly while it's cooking. This will help to prevent it from burning or curdling.
  • Let the sauce cool slightly before using: The sauce will thicken as it cools. Let it cool for a few minutes before using it, so that it has a chance to thicken up.
