RICH LEMON BARS
Steps:
- Preheat oven to 350. In medium bowl, combine 1-1/2 cups flour and 1/2 cup confectioners' sugar; cut in margarine until crumbly. Press onto bottom of lightly greased 13x9-inch baking pan; bake 15 minutes. Meanwhile, in large bowl, combine eggs, granulated sugar, baking powder, lemon juice and remaining 3 tablespoons flour; mix well. Pour over baked crust; bake 20 to 25 minutes or until lightly browned. Cool. Cut into bars. Sprinkle with additional confectioners' sugar. Store covered in refrigerator.
Tips:
- For a richer flavor, use fresh lemon juice instead of bottled.
- If you don't have a zester, you can use a microplane grater to zest the lemons.
- Be sure to use cold butter when making the crust. This will help it stay flaky.
- Do not overmix the batter. Overmixing will make the bars tough.
- Bake the bars until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Let the bars cool completely before cutting and serving. This will help them hold their shape.
- For a tart and tangy flavor, add a teaspoon of lemon extract to the batter.
- For a sweeter flavor, add a tablespoon of sugar to the batter.
- For a fun and festive twist, top the bars with fresh berries or whipped cream.
