2 cups shredded mozzarella cheese
½ cup chopped fresh broccoli

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).

1 whole wheat pizza dough (I use Trader Joe's)
2 ounces cremini mushrooms, thinly sliced
1 tablespoon olive oil
1 garlic clove, minced (or more, to taste)
1/4 teaspoon dried oregano (I used fresh) or 1 teaspoon fresh oregano (I used fresh)
1/2 cup ricotta cheese
1/2 cup mozzarella cheese (or more, your preference)
1/4 cup fresh basil leaf
kosher salt, to taste
fresh ground pepper

Steps:

  • Preheat oven to 425 degrees.
  • Prepare pizza dough-roll out on lightly floured surface and place on lightly oiled pizza pan.
  • Toss the mushrooms with the 1 TBL of olive oil. Top pizza dough with the mushrooms, garlic and oregano.
  • Drop dollops of ricotta, drizzle with olive oil, Kosher salt and fresh ground pepper.

2 pints cherry or grape tomatoes
1 large tomato, preferably heirloom, cut into half-moons
2 tablespoons fresh oregano leaves, for serving

Steps:

  • Preheat oven to 500 degrees, with racks in upper and lower thirds. Combine ricotta and Parmesan, season with salt and pepper, and stir in egg. On a baking sheet, drizzle pizza dough with 2 tablespoons oil and stretch or roll into a 16-inch-long oval. Spread ricotta mixture on dough, leaving a 1-inch border.
  • On a rimmed baking sheet, toss cherry tomatoes with remaining 2 tablespoons oil and season with salt and pepper. Bake cherry tomatoes on bottom rack and pizza on top rack until tomatoes are soft and skins have burst, 15 minutes. 1/2 pound Italian hot sausage
1 large red onion, cut into 1/4-inch thick slices
2 large yellow pepper, cored, seeded and quartered
2 large red pepper, cored, seeded and quartered

1 recipe favorite pizza dough, rolled into 4 (6-inch) rounds
1/2 pound grated fontina cheese
1 cup sheep's milk ricotta
2 tablespoons extra-virgin olive oil

Basil Vinaigrette, recipe follows
1/2 cup fresh basil leaves
1/4 cup white wine vinegar
1 tablespoon honey
Salt and freshly ground black pepper

Steps:

  • Preheat a grill.
  • Grill the sausage on both sides until golden brown and cooked through, about 10 minutes per side. Brush onions and peppers with the oil and season with salt and pepper. Grill the onions and peppers until soft, about 3 to 4 minutes per side. Remove the sausage from the grill and slice into 1/4-inch thick slices. Remove the onions, separate into rings, and roughly chop. Remove the peppers and slice into 1/8-inch thick slices.

  • Mix together the ricotta, extra-virgin olive oil, and oregano in a small bowl and season with salt and pepper, to taste. Remove the pizzas from the oven and drizzle with Basil Vinaigrette. Top with dollops of the ricotta cheese mixture and let rest for 5 minutes. Slice and serve.

1 teaspoon olive oil
1 envelope active dry yeast
Nonstick cooking spray
1/2 teaspoon dried oregano
4 plum tomatoes, cored and roughly chopped
2 cloves garlic, thinly sliced
Kosher salt and freshly ground black pepper
1/2 cup fresh chopped basil leaves
2 teaspoons olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups grated part-skim mozzarella cheese
2 tablespoons grated Parmesan
One 6-ounce bag baby spinach, steamed, squeezed dry and coarsely chopped
1/2 cup part-skim ricotta cheese
Torn fresh basil, for garnish
Crushed red pepper flakes, for sprinkling, optional

Steps:

  • For the dough: Combine both kinds of flour and 1/4 teaspoon salt in a large bowl and make a well in the center. Stir 1 1/4 cups warm water with the olive oil and yeast and pour into the well in the flour bowl. Stir until a soft and shaggy dough forms and then turn out onto a lightly-floured board and knead until smooth and the dough springs back when pressed with your thumb. Transfer to a bowl coated with nonstick cooking spray, mist the dough ball, cover and let stand until doubled in size, about 1 hour. Divide the dough into 2 pieces and roll each into a ball. Cover loosely and let rest an additional 30 minutes.
  • For the sauce: Combine the oregano, tomatoes and garlic in a small skillet and bring to a simmer over medium heat. Continue to cook, stirring and lightly mashing the tomatoes with a spatula, until the tomatoes have released their liquid and the sauce has become thick and jammy, about 15 minutes. Remove from the heat, season with salt and pepper and stir in the basil.
  • For assembling the pizza: Place 2 baking sheets in the oven and turn the oven to 500 degrees F. Stretch and/or roll each piece of dough until very thin and place each on a piece of lightly floured parchment paper that is the same size as the baking sheets heating in the oven (the dough will be a rustic oval shape). Rub each piece of dough with 1 teaspoon of the oil, sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper and carefully transfer to the hot baking sheets. Bake until lightly browned, 8 to 10 minutes. Remove from the oven and evenly spread each pizza crust with the sauce, spreading about 1/2 inch from the edge, and then top with the mozzarella, Parmesan and spinach. Return to the oven and continue to bake until the crust is crisp and the cheese has melted and is browned in spots, 6 to 8 minutes, rotating the pans if necessary. Remove from the oven and place small spoonfuls of the ricotta on the pizzas and sprinkle with fresh basil. Sprinkle the pizzas with salt and crushed red pepper flakes, if using.

Steps:

1 cup fresh asparagus, trimmed
½ cup ricotta cheese
¼ cup olive oil
2 cloves garlic, minced
1 pinch red pepper flakes, or to taste

2 tablespoons chopped herbs, such as basil, parsley, rosemary, thyme

Steps:

  • Preheat an oven to 550 degrees F (285 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add asparagus and cook uncovered until just tender, about 2 minutes. Drain in a colander, then immediately immerse in ice water for several minutes. Once asparagus is cold, drain well and set aside.

  • Heat it up:Set up a grill with heat source, coals or gas, on one side over medium-high. Clean and lightly oil hot grill.

Steps:

  • Prepare a grill for medium-high heat. Line a baking sheet with parchment paper.
  • Finely grate the zest of the lemon; cut the lemon in half and reserve. Stir together the ricotta, lemon zest, 1/4 teaspoon salt and a few grinds of black pepper. Set aside.

4 crimini mushrooms, stemmed and sliced
1/2 cup Pizza Sauce, recipe follows
1/4 cup diced pepperoni
3/4 cup shredded mozzarella
3/4 cup grated Parmigiano-Reggiano
One 14-ounce can San Marzano tomatoes
Drizzle of good olive oil
Pinch salt
3 to 4 fresh basil leaves, torn
1/2 teaspoon dried oregano

Steps:

  • Preheat the oven to 425 degrees F.
  • Whisk together the eggs and ricotta in large mixing bowl and season with salt and pepper.
  • Heat 2 tablespoons olive oil in a medium skillet over medium heat. Add the garlic and stir for a few seconds, until fragrant. Add the egg-ricotta mixture and cook, stirring gently, until it starts to set, a few minutes. Transfer to the oven and bake until nearly set, about 12 minutes.

2 ounces pizza dough
Flour, for rolling surface
Extra-virgin olive oil
1/2 cup basil pesto
2 cups ricotta cheese, preferably whole milk
4 tablespoons freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Prepare a medium-hot fire in your grill, or heat a cast-iron grill pan over medium heat.
  • Roll the pizza dough into 8 small pizzas, each about 1/8-inch thick and 3 inches round.
  • Lightly brush both sides of the pizzas with oil. Grill the pizzas over medium heat until the first side is nicely browned and firm to the touch, 3 to 5 minutes. Turn the pizzas over on the grill. Spoon about 2 teaspoons of pesto on each pizza, spreading it to the edges. On top of each pizza, spoon 4 teaspoons of ricotta cheese, in little balls. Cook the pizzas until the ricotta just begins to melt, 3 to 5 minutes from the moment you turned the pizzas. Sprinkle Parmesan over the top of each pizza. Season with salt and freshly ground pepper. Serve warm.

1 pizza dough
4 ripe medium-large tomatoes
3 garlic cloves, pressed
2 tablespoons olive oil (plus more for crust)
6 ounces fresh spinach
1/3-1/2 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup fresh basil, chopped

Steps:

  • Divide dough into two and roll out into two thin crusts. Lightly brush olive oil to taste on top and bake the dough for 5 minutes in a 425 degree oven on a greased and floured pan.
  • Meanwhile grate the four tomatoes into a medium bowl. If your tomatoes are really ripe, you can drain the excess liquid slighlty. Add the pressed garlic and olive oil.
  • Add the spinach to a medium pan over medium heat and saute with salt and pepper to taste until half-wilted.
  • Spread the tomato mixture on both crusts. Return to the oven for another 5 minutes. This should get rid of any excess liquid in the sauce.
  • Top the pizzas with spinach, basil, and a light sprinkling of mozzarella. Finish by placing small dallops of ricotta around the pizza, using a small spoon.
  • Bake for an additional 10 minutes or until cheese bubbles and begins to brown.

HOMEMADE PIZZA DOUGH ( THIS IS FOR 2 CRUSTS) OR USED STORE BOUGHT
4 1/2 c bread flour, or can use all purpose flour. i like the bread flour for crusts
1 Tbsp sugar
1 tsp salt
4 Tbsp olive oil ( i used 1 to cut down on fat)
1 pkg (1/4 ounce) quick rise yeast
2 c warm water 110 - 115 f.
PIZZA INGREDIENTS ( FOR 1 PIZZA, DOUBLE FOR TWO)
2 - 3 clove garlic, minced
2 Tbsp butter
2 Tbsp olive oil
basil, oregano, garlic powder, parsley, salt and pepper
3/4 c grated parmesan or romano cheese
2 c mozzarella or 4 cheese blend ( that's what i used)
1 boneless, skinless chicken breast, cut into bite sized pieces - seasoned and sauteed
1/2 c ricotta cheese, mixed with 1/2 cup grated parmesan cheese, 1 tablespoon parsley, and salt and pepper ( this is optional) but is so good.

Steps:

  • 1. For the crust: In a bowl, measure 2 cups warm water ( not hot) 110 - 115 F. Dissolve the yeast in water and add the sugar. Set aside. I use my kitchenaid mixer with dough hook. If you don't have, mix in a large bowl by hand. Put the flour, oil and salt in the bowl, attach dough hook, blend the flour, salt and oil; add the yeast water, mix until forms a ball.
  • 2. Knead until smooth and elastic, add more flour if dough is sticky , this should not be dry but firm until a ball forms. Let rise in a large bowl covered with a wet towel.. until doubled in size in warm spot.. away from draft.
  • 3. In a skillet, saute seasoned chicken in olive oil till cooked through. Set aside.
  • 4. Mix ricotta with 1/2 cup parmesan cheese, tablespoon parsley, salt and pepper. Set aside.
  • 5. Mince the garlic, add to the butter and oil. Microwave for about a minute; just until butter is melted and garlic starts releasing flavor. Set aside.
  • 6. When the dough has risen. Cut in half unless halving the recipe. I make the full recipe and make 2 pizza's. Grease round pizza pan or jelly roll pan. I used both, and I add corn meal for added crunchiness. Up to you.
  • 7. Spread out dough with oiled fingers. With a pastry brush; evenly spread garlic butter over the crust. Next season with salt, pepper, garlic powder, parsley, basil, red pepper flakes ( optional)
  • 8. Next parmesan cheese. Then dollops of ricotta mixture if using ( it really is good). Then layer chicken evenly. Next the mozzarella. Vegetables and more seasonings if desired. **** This picture is with chicken and cheeses and onion only.
  • 9. Bake in a 425 degree oven for 20 - 25 minutes or until desired crispness. This picture was cheeses, onion, red bell pepper, chicken and mushrooms. Yum!
  • 10. This pizza is wonderful without the chicken and veggies. I hope you try it, it really is a delicious change from traditional pizza.
  • 11. Remember: Fresh dough is always best.

1 zucchini, cut into ribbons using a vegetable peeler (about 3/4 cup ribbons)
Kosher salt and freshly ground black pepper
Zest of 1 large lemon plus 2 tablespoons lemon juice
3 teaspoons olive oil
1/2 cup thinly sliced tomatoes
1 ball pizza dough (or one 12-inch prepared dough round)
1/2 cup ricotta
1/2 tablespoon finely chopped fresh chives, plus more for garnish
1/4 cup grated Parmesan

Steps:

  • Position an oven rack in the center of the oven and preheat to 475 degrees F. Lightly coat a pizza pan or stone with nonstick cooking spray and put on the rack. (If you don't have a pizza peel or a way to transfer the pizza, skip placing the pan in the oven to preheat and prepare the pizza right on the pan.)
  • Toss the zucchini ribbons with 1/8 teaspoon salt and place in a colander over the sink. Let drain for 15 minutes to remove excess water. Pat the zucchini dry with a paper towel or kitchen towel. Toss with 1 tablespoon lemon juice, half of the zest and 1 teaspoon olive oil and set aside.
  • Wrap the tomato slices in a paper towel and gently press down, removing excess water. Set aside.
  • Stretch the pizza dough into a round large enough to fit on the pizza pan (or directly on the pan, if not using a pizza peel). Whisk together the ricotta, chives, remaining tablespoon lemon juice, remaining zest and 1/8 teaspoon each salt and pepper.
  • Spread the ricotta over the prepared dough, leaving a small border for the crust. Evenly scatter the tomato slices and zucchini ribbons over the ricotta. Lightly drizzle with the remaining 2 teaspoons olive oil and sprinkle with Parmesan and additional chives.
  • Bake until the crust is golden brown and the cheese is bubbly, 12 to 15 minutes. Serve.

For the crust:
3 cups all-purpose flour
1 tablespoon kosher salt
6 tablespoons olive oil
2 eggs, beaten and mixed with 6 tablespoons water
For the filling:
5 eggs, beaten
1/2 cup grated pecorino
1 pound ricotta, excess liquid drained
1 cup salami, such as sopressata, sliced or cut into 1/2-inch cubes
1 cup shredded mozzarella (or mild cheddar or Gouda)
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped Italian parsley

Steps:

  • 1. Preheat oven to 400°F.
  • 2. Place the flour, salt, and olive oil in a large bowl and work it with your hands until the oil is incorporated and the mixture resembles crumbs.
  • 3. Add the egg mixture and toss until the dough comes together in a dry mass. (Add another tablespoon or two of water, if needed.) Knead until just smooth.
  • 4. Flatten the dough into a disc; set aside.
  • 5. In a large bowl, combine all the filling ingredients except 1 tablespoon of the eggs and 1 tablespoon of the pecorino.
  • 6. Line the bottom and sides of a 9-inch-diameter pie dish with 2/3 of the dough (rolled out 1/8 inch thick), allowing for a 1-inch overhang.
