- 1. Beat eggs lightly then stir in ricotta cheese until smooth. Stir in pumpkin,brown sugar,salt, pumpkin spice,vanilla extract and evaporated milk. Mix until well blended pour into pie shall. Bake at 375 for 45 to 60 minutes cool on wire rack.

- Use fresh pumpkin puree. Canned pumpkin puree can be used in a pinch, but fresh pumpkin puree will give your pie a richer, more flavorful taste. To make fresh pumpkin puree, simply roast a pumpkin until tender, then scoop out the flesh and puree it in a food processor or blender.
