Categories     dinner, main course

Time 20m

Yield 4 - 6 servings

Number Of Ingredients 13

3/4 pound wild mushrooms, preferably porcini, although cultivated mushrooms may be used
2 tablespoons butter
1/3 cup finely chopped onions
1 pound arborio rice, available in specialty food shops, about 2 2/3 cups
1/2 cup dry white wine
4 cups simmering fresh or canned chicken broth
5 tablespoons olive oil
1 clove garlic, peeled and crushed
2 bay leaves
Salt to taste, if desired
Freshly ground pepper to taste
2 teaspoons finely chopped parsley
Freshly grated Parmesan cheese

Steps:

  • Cut the mushrooms into one-inch pieces. There should be about four cups.
  • Melt the butter in a saucepan and add the onions. Cook, stirring, until the onions are wilted. Add the rice and cook, stirring, about one minute. Add the wine and cook, stirring, about two minutes or until the wine is absorbed.
  • Add the four cups of simmering broth and cook over moderately high heat.
  • Heat four tablespoons of the oil in a skillet and add the garlic and bay leaves. Cook briefly and add the mushrooms. Cook, stirring, about two minutes, and sprinkle with salt, pepper and parsley. Cook about one minute more, stirring, and remove the garlic clove and bay leaves.
  • When the rice has cooked eight minutes, add the mushrooms. Continue cooking, stirring often from the bottom, about two to five minutes, or until the rice is creamy but with the grains slightly resilient to the bite. Sprinkle with the remaining tablespoon of olive oil and stir. Serve with freshly grated Parmesan cheese on the side.

Categories     appetizer

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 tablespoon olive oil
2 tablespoons wild leeks, diced (domestic leeks may be used)
1 cup boletus* (wild mushroom), diced
1 cup orange latex milky mushrooms* (wild mushrooms), diced
1/4 cup cream sherry
1 cup Arborio rice
3 cups low-fat chicken stock
1/4 cup Parmesan, grated
1 tablespoon Italian flat leaf parsley, chopped
To taste salt and black pepper

Steps:

  • In a saute pan with the olive oil, sweat the leeks and brown the mushrooms lightly. Add the sherry and reduce. Add the rice and saute for 2 minutes.

  • *(Domesticated mushrooms may be substituted. Your choice, the drier the better).

WILD MUSHROOM RISOTTO

Wild Mushroom Risotto image

For the rice, visit your local Italian market and purchase a high quality Italian short grain rice called Arborio, which comes in three varieties: Vialone, Carnaroli, and Baldo; each one has slightly different cooking times, texture, and grain size. The high starch content creates the creamy texture. The better the quality of rice and mushrooms, the more expensive it will be, but the end result will be worth it! Categories     Main, mushrooms, rice and grain

Number Of Ingredients 9

4 to 6 cups chicken stock
1 cup wild mushrooms, cleaned and sliced
3 Tbsp olive oil
½ cup onion, finely chopped
1 clove garlic, minced
2 cup Arborio rice
1 cup white wine
2 Tbsp butter
½ cup Parmesan cheese, grated salt and freshly ground pepper to taste

Steps:

  • In a medium pot on medium heat, bring stock to a simmer.
  • In a frying pan on medium-high heat, sauté the mushrooms in oil until tender and then set aside.
  • In the same frying pan on medium-high heat sauté the onions and garlic, stirring constantly until onions are translucent.
  • Reduce heat to medium, add the rice and cook for about 2 minutes. (You don't want to brown the rice, just coat it with the oil.)
  • Add the wine and stir until it is absorbed, then pour in the simmering stock 1/2 cup at a time, stirring constantly until the stock is absorbed. (This step will take about 20 minutes, and the rice will be tender but firm to the bite.)
  • Once the rice is almost ready, stir in the butter and Parmesan cheese. Just before serving, add the sautéed mushrooms. (Adding the mushrooms in the last stage prevents the risotto from turning grayish in color.) Season with salt and pepper. Top with more Parmesan if desire.

8 cups water
1 teaspoon canola oil
1 pound fresh Portobello or shiitake mushrooms
1 large shallot
1 small clove garlic
1 cup dry white wine
1/2 cup pearl barley

Add the shallots and garlic to the saucepan. Reduce the heat to medium low and cook until tender, about 5 minutes. Add the wine. Increase the heat to medium high and simmer until reduced to 1/2 cup, about 5 minutes. Add the barley and stir. Ladle in 1/2 cup of the hot broth and stir until all the liquid has been absorbed. Risotto : Mushrooms With Garlic, Thyme and Parsley image

This is an addition to a good basic risotto recipe. I add this to a double batch of my Basic Risotto (recipe #145066). The mushroom mixture is ridiculously flavorful.

Provided by dividend

Categories     Rice

Time 15m

Yield 4 serving(s)

Number Of Ingredients 9

9 ounces fresh mushrooms (I like a mix of different kinds, oyster, shiitake, cremini, chanterelles, reconstituted dried porcin)
3 tablespoons extra virgin olive oil
fresh thyme, chopped or 1 teaspoon dried thyme
1 garlic clove, finely chopped
salt
flat leaf parsley, chopped
1/4 teaspoon chili powder
lemon juice
fresh ground black pepper

  • Thinly slice or tear the mushrooms.
  • In a very hot pan, heat the olive oil, and add the mushrooms and thyme. Cook for 1 minute, toss them, then add the garlic and a pinch of salt.
  • Cook for 2 or 3 more minutes, taste them to make sure they're cooked through. Add some parsley, a pinch of chili powder, a squeeze of lemon juice, and some pepper. Toss about another minute more, and remove from the heat.
  • Finely chop half the cooked mushroom mixture. Add the chopped half to the basic risotto recipe at step 8 (the same time you add liquid or stock).
  • Add the other half of the mushroom mixture at step 12 (with the butter and cheese at the very end).

ORZO RISOTTO WITH WILD MUSHROOMS

Orzo Risotto with Wild Mushrooms image

While the Saudi Arabian rice dish known as saleeg may resemble Italian risotto, it's set apart by the addition of milk, which gives it a rich, creamy texture. Martha's interpretation pairs orzo with dried and fresh mushrooms, fava beans, lots of herbs and spices, and soft-poached eggs.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Number Of Ingredients 18

1 ounce mixed dried mushrooms
2 cups homemade or store-bought low-sodium vegetable stock
2 cups whole milk
5 cardamom pods, crushed
4 tablespoons unsalted butter
8 ounces mixed wild mushrooms, such as chanterelles, cremini, shiitake, or oyster, cleaned and roughly chopped
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 medium shallot, minced
1 medium leek, white and light-green parts only, cut into 1-inch pieces
1 teaspoon ground coriander
Pinch of red-pepper flakes
1 1/2 cups dried orzo
1 cup cooked fava beans
1/2 cup roughly chopped fresh curly parsley
1/4 cup chopped fresh dill
Zest and juice of 1/2 lemon
6 soft-poached eggs, for serving

Steps:

  • Cover dried mushrooms with 1 1/2 cups boiling water in a heatproof bowl; let soak 20 minutes. Using a slotted spoon, transfer mushrooms to a cutting board and roughly chop. Strain soaking liquid; add to a large pot along with stock, milk, and cardamom. Bring to a low simmer over medium heat and keep stock warm.
  • Heat 2 tablespoons butter in a medium pot over medium-high. Add wild mushrooms and chopped dried mushrooms. Season with salt and pepper and cook, stirring occasionally, until golden, about 3 to 4 minutes. Use a slotted spoon to remove mushrooms from pan; set aside.
  • Melt 1 tablespoon butter in same pot over medium heat. Cook garlic, shallot, leek, coriander, and red-pepper flakes until vegetables are tender, about 5 minutes. Stir in orzo until well combined.
  • Ladle 2 cups reserved stock over orzo and cook, stirring often with a wooden spoon, until almost completely absorbed. Continue adding stock, 1 cup at a time, stirring often and waiting for each addition to be almost completely absorbed before adding the next, until orzo is just al dente, about 20 minutes. Stir in sauteed mushrooms and continue to cook, stirring, for 2 minutes.
  • Remove from heat and stir in fava beans, 1/4 cup parsley, 2 tablespoons dill, lemon zest and juice, and remaining 1 tablespoon butter. Season with salt and pepper. Spoon orzo into serving bowls, top each with a soft-poached egg, and sprinkle with remaining herbs.

RISOTTO WITH WILD MUSHROOMS AND PEAS

Risotto with Wild Mushrooms and Peas image

This is a great dish to serve on Sunday night when The Sopranos come on. It's classy and understated. A good way to add more intense mushroom flavor is to throw the mushroom stems in with the chicken stock. Just be sure to brush the mushroom stems first for any loose dirt.

Yield serves 6 to 8

Number Of Ingredients 15

Extra-virgin olive oil
1 onion, minced
2 garlic cloves, minced
1 pound assorted mushrooms, such as Portobello, crimini, and chanterelle, stems removed, sliced
Leaves from 3 sprigs fresh thyme
2 tablespoons chopped fresh flat-leaf parsley
2 bay leaves
Sea salt and freshly ground black pepper
2 cups Arborio rice
1/2 cup dry white wine, such as Pinot Grigio
8 cups Chicken Stock (page 156), heated
1 cup frozen sweet peas, run under cool water to thaw
2 tablespoons unsalted butter
1/2 cup freshly grated Parmigiano-Reggiano cheese
Fresh flat-leaf parsley, for garnish

Steps:

  • Place a large, deep skillet over medium heat and drizzle with a 3-count of oil. Add the onion and garlic, and cook, stirring, for 5 minutes, until soft. Toss in the mushrooms and herbs; cook down until the mushrooms lose their liquid and are lightly browned, about 10 minutes. Season with salt and pepper. Add the rice and stir for a minute or two, until the grains are well coated and opaque. Season again; seasoning in stages makes the rice taste good from the inside out. Stir in the wine and cook a minute to evaporate the alcohol. Pour in 1 cup of the warm stock. Stir with a wooden spoon until the rice has absorbed all the liquid; then add another cup. Keep stirring while adding the stock a cup at a time, allowing the rice to drink it in before adding more. You may not need all the stock. Taste the risotto. It should be slightly firm but creamy-definitely not mushy, but not raw either. Fold in the peas, butter, and Parmigiano cheese. Drizzle with olive oil and garnish with parsley to finish the dish up. Risotto doesn't like to sit around, so serve it immediately.

Tips:

  • Use a wide, shallow pan: This will help the risotto cook evenly and prevent it from sticking.
  • Toast the rice: This will help to develop the flavor of the risotto and give it a slightly nutty taste.
  • Add the liquid gradually: This will help the rice to absorb the liquid evenly and prevent it from becoming too soupy.
  • Stir the risotto frequently: This will help to prevent the rice from sticking to the pan and will also help to release the starch, which will give the risotto its creamy texture.
  • Don't overcook the risotto: The rice should be cooked through but still have a slight bite to it.
  • Add the cheese and butter at the end: This will help to create a creamy, flavorful sauce.
  • Garnish with fresh herbs: This will add a pop of color and flavor to the risotto.

Conclusion:

Risotto with wild mushrooms, pine nuts, and parsley is a delicious and elegant dish that is perfect for a special occasion. With its creamy texture, earthy flavors, and nutty crunch, this risotto is sure to impress your guests. So next time you're looking for a new and exciting way to enjoy risotto, give this recipe a try. You won't be disappointed!
