- In a small bowl, mix together the onion and 1 tablespoon of the salt. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
- In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
- Preheat the broiler. Slice the rolls in half lengthwise. Using your hands, shallowly scoop out the inside of each half. Transfer the rolls to a baking sheet and arrange scooped-side up. Toast the rolls under the broiler for about 1 minute. Slather the inside of the rolls with the horseradish sauce. On each of the roll bottoms, layer 2 tomato slices and season with salt and pepper to taste. Top the tomatoes with some of the roast beef overlapped into "ruffles" and season with salt and pepper. - Pat roast dry with paper towel.
- Mix remaining ingredients together.
- Slather all over roast I use a silicone brush.
- Let sit a few (2 -3) hours at room temperature.
- Roast in a preheated oven set at 500F for 10 minutes.
- Without opening oven reduce heat to 325F and roast to desired doneness. about 20 minutes per lb. or to a an internal temperature of 125F for rare.
- When done place roast on a platter and cover with Aluminum foil for about 15 -20min.
- Meanwhile add 1/2 cup red wine to roaster and deglaze over medium heat. ( scrape up all crusty brown bits).
- Place this in a saucepan and add 2 cups beef broth, and 1 1/2 Tbsp cornstarch mixed in about 1/4 cup cold water. Bring to the boil and stir till nicely thickened.
- Check for seasoning.

- Wash and rinse your meat (then towel dry) stab it all over with a very sharp knife & rub or sprinkle all of the seasonings onto the roast .
- Sauté minced garlic in the oil .
- Add the onions & sauté until light golden brown & then remove them with a slotted spoon or tongs and set to the side.
- Brown the seasoned roast on all sides (may need to add a little more olive oil).
- If using a roasting pan line it with foil and also generously spray the foil.
- Place the fried roast in the baking pan with the remaining grease (add a cup of water around it .

- Add potatoes & carrots on the sides of the roast .
- Pour the can of beef broth & French soup over everything .
- Now add the sautéed onions & garlic on top of the roast.

- Bake at 400 for 45 minutes.
- Mix 2 Tablespoons of flour with 1/4th cup of water & pour it over everything in the dish . This is going to be the yummy gravy .

- Slather the roast with the roast beef slather (recipe on Recipezaar), let rest 15 to 20 minutes, or spread with Dijon mustard.
- In the meantime, spray a roaster with veggie spray.
- Place the thick slices of onion beside each other in the middle of the roaster.
- sprinkle with salt and pepper.
- In a large bowl, place the carrots, mushrooms and potatoes, pour olive oil over, just enough to moisten, stir to coat well.
- Sprinkle veggies with salt and pepper.
- Place the roast on top of the onion slices, cut the bacon into 3 or 4 slices and place on top of the roast, if using.
- Place the whole potatoes, one on each side and one at each end of the roast.

- Crock pot directions:.
- Pour half can soda in bottom of crock pot. Add roast, fat side down. Season with kosher salt and fresh ground pepper. Slather half the jam on roast. Turn fat side up, season and slather with remaining jam. Sprinkle soup mix over top. Strip rosemary leaves from stems or toss in the stems (you'll have to fish them out later).
- Cook on high 4-5 hours or low 7-8 hours.
- Add carrots and potatoes for the last 2 hours on high or last 4 hours on low if you don't like them mushy. Turn the roast over when you add the veggies.

- Season beef with 2 tablespoons salt and 1 teaspoon pepper. Wrap with plastic and refrigerate at least 8 hours and up to 1 day. Unwrap and let stand at room temperature 1 hour.
- Preheat oven to 350 degrees. Heat a large skillet (preferably cast iron) over medium-high. Add 2 tablespoons oil and brown beef all over, 12 to 14 minutes. Transfer to a plate; carefully pour oil from skillet and discard.
- Place shallots in a single layer in bottom of skillet; drizzle with 1 tablespoon oil. Stir together garlic, mustard, and 2 tablespoons oil; rub mixture all over beef. Lay 1 handful of herbs down center of skillet. Place beef on top, fat-side up. Transfer to oven and roast 45 minutes.
- Place remaining handful of herbs on top of beef; drizzle herbs with remaining 1 tablespoon oil. - Return skillet to medium-high heat. Stir in vermouth; bring to a boil and cook, stirring occasionally, until just a few tablespoons remain, 5 to 7 minutes. Strain through a fine-mesh sieve and let cool 10 minutes.
- Whip heavy cream to stiff peaks. Fold in sour cream, cayenne pepper, horseradish, and vermouth mixture. Season with salt. Store horseradish cream in refrigerator until ready to serve, or up to 3 days.
- Remove twine from roast; thinly slice across the grain and serve, with horseradish cream, shallots, and mostarda.
