Season to taste with more honey, salt and pepper.

ROAST GOOSE WITH SWEET GLAZE
While goose is thought of as a traditional Christmas entree, some people do not care for the all dark meat bird. My recipe will change their mind in one bite. The sweet citrus glaze compliments the rich, juicy meat perfectly. -Colleen Sturma, Milwaukee, Wisconsin

ORANGE MADEIRA POT ROAST
I am posting this recipe as a correction to one posted by another user. I found this recipe on southernfood.about.com after I did a web search because something didn't look right in the original recipe posted here. It is an exceptionally tasty dish, and something very different from your standard 'Pot Roast' fare. Try it when you want a change of flavor. Feel free to dress it up with your favorite vegetables or side dishes.

Steps:
- Soak the prunes for an hour in the port.
- Preheat oven to 350 degrees.
- Melt the butter in a skillet and soften the onion, garlic and celery in the butter. Add the parsley, thyme, sage and apples. Mix thoroughly and add the prunes and port. Cook for 15 to 20 minutes. Add the bread crumbs and season with salt and pepper.
- Remove excess fat from the goose cavity (use this for roasting potatoes) and dry the goose inside and out with paper towels. Rub inside and out with lemon juice and season.
- Stuff the goose with the stuffing mixture and truss. Place on a roasting rack and roast for three to three-and-a-half hours, basting occasionally. The goose is done when the juices in the thigh are pale yellow. Let it rest for 15 minutes before serving.
Tips:
- Thaw the goose properly: If your goose is frozen, thaw it in the refrigerator for 2-3 days before cooking.
- Choose the right stuffing: You can stuff the goose with a variety of ingredients, such as bread crumbs, herbs, and vegetables. Season the stuffing with salt, pepper, and other spices to taste.
- Truss the goose: Once the goose is stuffed, truss it with kitchen twine to hold the stuffing in place.
- Roast the goose at a high temperature: Start by roasting the goose at 450°F for 30 minutes. This will help to brown the skin and seal in the juices.
- Reduce the temperature and continue roasting: After 30 minutes, reduce the oven temperature to 325°F and continue roasting the goose for 2-2 1/2 hours, or until the internal temperature reaches 165°F.
- Baste the goose regularly: While the goose is roasting, baste it with the pan juices every 30 minutes. This will help to keep the goose moist and flavorful.
- Let the goose rest before carving: Once the goose is cooked, let it rest for 15-20 minutes before carving. This will allow the juices to redistribute throughout the meat.
Conclusion:
Roast goose with oranges and Madeira is a classic holiday dish that is sure to impress your guests. With its crispy skin, tender meat, and flavorful stuffing, this dish is a true feast. By following these tips, you can make sure that your roast goose is perfectly cooked and delicious.
