Time 25m

Yield 6 servings.

Number Of Ingredients 5

1-1/2 pounds fresh asparagus, trimmed
2 to 3 tablespoons olive oil
1/2 teaspoon coarsely ground pepper
1/8 teaspoon salt
1-1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon

Steps:

  • Place asparagus in a shallow baking dish coated with cooking spray. Drizzle with oil; sprinkle with pepper and salt. Toss to coat. Bake, uncovered, at 450° for 13-15 minutes or until crisp-tender, turning occasionally. Sprinkle with tarragon.

Nutrition Facts :

Tips:

  • Choose the right asparagus: Look for asparagus spears that are firm and have tight, closed tips. Avoid spears that are limp or have woody ends.
  • Trim the asparagus: Cut off the tough, woody ends of the asparagus spears. You can also peel the asparagus if desired, but this is not necessary.
  • Blanch the asparagus: Blanching the asparagus helps to preserve its color and crispness. To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus spears and cook for 2-3 minutes, or until they are tender-crisp. Immediately remove the asparagus from the boiling water and plunge it into a bowl of ice water to stop the cooking process.
  • Wrap the asparagus with serrano ham: Once the asparagus is blanched, wrap each spear with a slice of serrano ham. You can secure the ham with a toothpick if desired.
  • Roast the asparagus: Preheat your oven to 400 degrees Fahrenheit. Place the asparagus spears on a baking sheet and drizzle with olive oil. Season with salt and pepper. Roast the asparagus for 10-12 minutes, or until the ham is crispy and the asparagus is tender.
  • Serve immediately: Roasted asparagus wrapped in serrano ham is best served immediately. You can garnish with fresh herbs, such as parsley or chives, if desired.

Conclusion:

Roasted asparagus wrapped in serrano ham is a delicious and easy-to-make appetizer or side dish. The asparagus is tender-crisp, the ham is crispy, and the combination of flavors is simply irresistible. This dish is sure to impress your guests, and it's also a great way to get your daily dose of vegetables.
