ROASTED CARROTS AND PARSNIPS WITH ROSEMARY AND GARLIC

Roasted Carrots and Parsnips with Rosemary and Garlic image

Parsnips are carrots' sweeter cousins, with a rich, nutty flavor. Though they don't pack the beta-carotene that their orange relatives offer, they're a good source of vitamin C and folacin. Because the core can be woody, I always remove it; this can be a tedious task but it's worth it.

Provided by Martha Rose Shulman

Time 1h

Yield Serves 4

Number Of Ingredients 6

3/4 pound parsnips, peeled
1 pound carrots, peeled
Salt and freshly ground pepper
4 plump garlic cloves, peeled and lightly crushed
3 or 4 sprigs fresh rosemary
2 tablespoons extra virgin olive oil

Steps:

  • Preheat the oven to 425ºF. Oil a sheet pan or a baking dish large enough to fit all of the vegetables in a single layer. Cut the carrots and parsnips into 3-inch lengths. Quarter the fat lengths, and cut the thin ends into halves so that the pieces are about the same size. Cut away the cores from the parsnips. Toss with the garlic, salt, pepper, rosemary sprigs, and olive oil until all of the vegetables are coated with oil.
  • Spread in an even layer in the prepared pan or baking dish. Cover with foil and place in the oven for 30 minutes. Turn the heat down to 375ºF and uncover the pan. Stir gently, and continue to roast until lightly browned, 20 to 30 minutes. Remove from the heat, and serve.

ROASTED, CARAMELIZED CARROTS WITH GARLIC

Roasted, Caramelized Carrots With Garlic image

Oven roasted until the carrots are caramelized, it's so good and so super easy. Add the flavor of garlic and fresh parsley and send it over the top! This is a great side dish for any entree, and good enough to serve royalty! *Please do not use the little carrots marketed as "Baby carrots". Those are cut out pieces from deformed whole carrots and preserved in a chlorine bath since the pieces no longer have a skin to preserve them. I don't suggest cooking with pool water, either!

Categories     Chicken Thigh & Leg

Time 40m

Yield 4 serving(s)

Number Of Ingredients 7

4 chicken thighs
1 1/2 lbs carrots, peeled and trimmed (I used organic rainbow carrots)
1 large onion, peeled and cut into eighths
1 head garlic
4 tablespoons olive oil
1 tablespoon chopped fresh rosemary
kosher salt & freshly ground black pepper, to taste

Steps:

  • 1. Preheat the oven to 425°F.
  • 2. Arrange the carrots and onion in a single layer on a greased baking sheet. (I also added a baby beet, peeled and halved).
  • 3. Slice the top off a head of garlic; discard the top and place on the tray.
  • 4. Drizzle 2 tablespoons of olive oil over the vegetables; season with the rosemary, and salt and pepper.
  • 5. Top with the chicken thighs. Rub each thigh with 1 teaspoon olive oil; season with salt and pepper.
  • 6. Roast in the oven until the chicken skin is golden and the carrots are tender, 15 to 25 minutes.
  • 7. To serve, divide the vegetables and chicken thighs among four plates.
  • Note: Candidly, I actually had already cooked chicken, which I plopped on top to give you an idea of how this looks, so your chicken will likely look different. The time to cook will depend on how large your carrots are - I halved lengthwise some of the larger ones, mine took about 25 minutes to get tender. Test chicken to make sure it's done - thighs vary so much in size. I made only half the recipe.

Tips:

  • Choose the right carrots: Look for carrots that are firm, smooth, and brightly colored. Avoid carrots that are limp, wrinkled, or have blemishes.
  • Roast the carrots at a high temperature: This will help them caramelize and develop a delicious flavor. Aim for a temperature of 425 degrees Fahrenheit (220 degrees Celsius).
  • Use a variety of seasonings: Garlic, olive oil, salt, and pepper are all great options. You can also add other herbs and spices, such as thyme, rosemary, or paprika.
  • Don't overcrowd the pan: This will prevent the carrots from roasting evenly. Make sure there is enough space between each carrot so that they can get crispy.
  • Roast the carrots until they are tender: This will take about 20-25 minutes. You can check the carrots by piercing them with a fork. They should be tender, but not mushy.

Conclusion:

Roasted carrots are a delicious and healthy side dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. Whether you like them simple or seasoned, roasted carrots are a great way to add some color and flavor to your next meal.
