2 medium sweet potatoes, washed and dried
1 Tbsp olive oil, extra virgin
1 Tbsp parmesan cheese, grated
1 tsp smoked paprika (more if you like)
1 tsp coarse salt
1/8 tsp ground black pepper
1/8 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp cumin

Steps:

  • 1. Preheat oven to 450 degrees.
  • 2. Cut potatoes into 1/4″ thin strips, or to desired thickness. NOTE: you can peel or not peel the potatoes. Soak potatoes in ice water for 30 minutes. Drain and blot dry with paper towels.
