ROASTED GREEN BEANS WITH GARLIC AND PINE NUTS

Roasted Green Beans With Garlic and Pine Nuts image

I really LOVE green beans, and this recipe is yet another tasty way to serve them. I belive the recipe called for whole garlic cloves, but I like to smash them with the back of my knife to 1) get the peels off and 2) release some of that wonderful garlic flavor. I enjoy these beans right out the oven as is, but if you're like my husband, go ahead and add the couple tbsp of the vinegar of your choice before serving. These taste great right from the oven, or at room temp.

Tips:

  • Choose fresh green beans: Look for beans that are bright green and crisp. Avoid beans that are limp or have brown spots.
  • Trim the green beans: Cut off the ends of the green beans. You can also string the beans if desired.
  • Roast the garlic: Roasting the garlic mellows out its flavor and makes it sweeter. To roast the garlic, simply wrap a head of garlic in foil and bake it at 400 degrees Fahrenheit for 45 minutes.
  • Use a high-quality olive oil: Olive oil is a key ingredient in this recipe. Use a high-quality extra virgin olive oil for the best flavor.
  • Season the green beans well: Season the green beans with salt, pepper, and garlic powder before roasting. This will help to enhance their flavor.
  • Roast the green beans until they are tender-crisp: The green beans should be tender but still have a slight crunch. Roast them for 15-20 minutes, or until they are cooked to your liking.
  • Add the cashews and parsley: Once the green beans are roasted, stir in the cashews and parsley. This will add a crunchy texture and a pop of color to the dish.

Conclusion:

Roasted Garlic Green Beans with Cashews is a simple but delicious side dish that is perfect for any occasion. It is easy to make and can be tailored to your liking. If you like your green beans more crispy, roast them for a few minutes longer. If you like them more tender, roast them for a few minutes less. You can also add other ingredients to the dish, such as diced red onion, sliced almonds, or crumbled feta cheese. Enjoy!
