1/2 teaspoon fine sea salt
1/2 cup heavy cream, plus more for brushing
1 1/2 pounds stemmed, seedless red grapes
2 1/2 tablespoons sugar
2 teaspoons balsamic vinegar
2 tablespoons unsalted butter, cubed
1 cinnamon stick, broken in half
2 sprigs thyme
3/4 cup heavy cream
1/2 cup creme fraiche
Flaky sea salt and freshly ground pepper, optional
