3 pounds russet potatoes, cut into large dice

1/4 cup chopped shallots

  • Preheat oven to 375 degrees F.
  • Mix 6 tablespoons of olive oil, the garlic, salt, pepper and herbs. Add potatoes and toss. Spread out onto a baking sheet and bake for 55 minutes, stirring occasionally. 1 tablespoon olive oil
1 dash garlic powder
1 tablespoon chopped parsley (stems removed)
1 scallion, sliced thinly (both green and white parts)
1 tablespoon dill pickle, chopped finely (I like Clausen)
1/4 cup sour cream
1/2 teaspoon sugar
1 tablespoon red wine vinegar
1/4 teaspoon celery seed
salt and pepper
chopped black olives (optional)
finely chopped red bell pepper (optional)

Steps:

  • Heat oven to 400°F.
  • Scrub, but don't peel the potatoes.
  • Mix olive oil and garlic powder.

¼ cup kosher salt
10 cups cold water
½ cup finely diced celery
2 tablespoons finely diced sweet onion
2 tablespoons chopped fresh parsley
3 large hard-boiled eggs, peeled and cut into chunks
1 teaspoon chopped fresh chives for garnish
1 pinch paprika for garnish
1 ¼ cups mayonnaise, or more if needed
3 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
1 teaspoon kosher salt, plus more as needed

cayenne pepper to taste

Steps:
