ROASTED OKRA

Roasted Okra image

As a good Southern gardener, I find myself bringing in okra by the armload nearly every other day. Stewed okra is great, but for a little variety, we like to roast ours from time to time. This is so simple and easy and the okra tends to not be nearly as gummy or slimy when roasted. Chopped tomato makes a great addition when we have some handy.

This is a really easy recipe using frozen okra. Being a full-time employee and a mom of a toddler, I always look for easy and healthy recipes. This one has an Indian flavor to it. It's so easy to put together, and it turns out very well. When you roast the okra, you'll notice the slime goes away. That's what I really like about this recipe. You don't have to monitor it. Just put it in the oven, and it's done.

ROASTED OKRA AND ONIONS

Roasted Okra and Onions image

Buy the freshest, firmest okra you can find. Pick pods that are no bigger than your ring finger. Slicing them lengthwise just before you roast them will keep slime to a minimum. This basic technique is very accommodating. You can add quartered yellow squash or zucchini, or even a chopped up fresh tomato. The trick is to roast the vegetables until the edges of the onion begin to turn brown.

OKRA AND ONION SAUTé

Okra and Onion Sauté image

My boyfriend loves okra. I have never eaten it before, let alone how to cook it. But I saw some fresh okra in my store on sale this week and bought it. I searched for recipes, there were plenty for fried, stewed with tomatoes, and for gumbo. I had no clue. So I just asked him how he likes it. I used his basic method and added the onion and garlic on my own. Tastes pretty good!

Tips:

  • Choose the right okra: Select young, tender okra pods that are about 3-4 inches long and have a smooth, bright green color. Avoid okra pods that are large, woody, or have blemishes.
  • Prepare the okra properly: Wash the okra pods thoroughly and trim the stem ends. If desired, you can also slice the okra pods into 1-inch pieces.
  • Use high-quality olive oil: Extra virgin olive oil is the best choice for roasting okra and onions. It adds a delicious flavor and helps to prevent the vegetables from sticking to the pan.
  • Season the vegetables well: Don't be afraid to be generous with the seasonings. Salt, pepper, garlic powder, and onion powder are all great choices. You can also add other spices, such as cumin, paprika, or chili powder, to taste.
  • Roast the vegetables at a high temperature: This will help to caramelize the vegetables and give them a crispy exterior. Aim for a temperature of 425 degrees Fahrenheit (220 degrees Celsius).
  • Roast the vegetables until they are tender: The okra and onions should be tender when pierced with a fork. This usually takes about 20-25 minutes, but it may vary depending on the size and thickness of the vegetables.
  • Serve the roasted okra and onions immediately: These vegetables are best served hot and fresh. You can enjoy them as a side dish or as a main course with a grain or protein of your choice.

Conclusion:

Roasted okra and onions is a simple but delicious dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With its crispy exterior and tender interior, roasted okra and onions is a dish that everyone will enjoy.
