Baked Olives and Feta Cheese image

Okay, you're having a party. You gotta have some gooey cheese! A big skillet of feta topped with lemon, fennel and herbe marinated olives and baked in the oven until melty...yummmm!!! It's a tantalizing flavour combination. This recipe is so easy. Serve with pita crisps or slices of rustic bread. I serve this in the same iron skillet I use to make the dish!

  • Roast the olives in a single layer: This will ensure that they roast evenly and do not steam.
  • Season the olives generously: Use a variety of herbs and spices to flavor the olives. Some popular options include garlic, rosemary, thyme, oregano, and red pepper flakes.
  • Roast the olives until they are slightly wrinkled and tender: The roasting time will vary depending on the type of olives you are using. Be careful not to over-roast the olives, as they will become bitter.
