ROASTED PARSNIPS AND CARROTS WITH SAGE

Roasted Parsnips and Carrots With Sage image

A delicious dish based on a Real Simple recipe, but cut down to fit my family's size, and with reduced oil. My husband loved this recipe, and he generally turns up his nose at veggies. The parsnips tasted like sweet potato fries, to me. Be aware that the cooking time will vary depending on how thin you cut your strips. Also, I increased the temperature to 400 degrees to speed up the cooking time, and the veggies did just fine at about 30 minutes. If you're trying to reduce your carbon footprint this winter by eating "closer to home," this dish might find its way onto your table, too. I served it with Jerk Tilapia and basmati rice. Next time, I plan to try the meal combination with Coconut Basmati Rice.

Tips:

  • Choose the right parsnips: Look for parsnips that are firm and have a smooth skin. Avoid any that are bruised or have blemishes.
  • Peel the parsnips thinly: This will help them cook evenly and prevent them from becoming tough.
  • Toss the parsnips with oil and seasonings: This will help them caramelize and develop a delicious flavor.
  • Roast the parsnips at a high temperature: This will help them get crispy on the outside and tender on the inside.
  • Don't overcrowd the pan: If you overcrowd the pan, the parsnips will steam instead of roasting.
  • Roast the parsnips until they are tender and caramelized: This will take about 20-25 minutes.
  • Serve the parsnips immediately: They are best enjoyed hot and crispy.

Conclusion:

Roasted parsnips are a simple but delicious side dish that can be enjoyed all year round. They are a good source of vitamins and minerals, and they are also naturally low in calories and carbohydrates. With their sweet and nutty flavor, roasted parsnips are a great way to add some variety to your meals. So next time you're looking for a healthy and delicious side dish, give roasted parsnips a try!
