6 portobello mushrooms
1/3 cup extra-virgin olive oil
1/2 teaspoon crushed red pepper flakes
1 pinch sugar
2 sprigs fresh thyme
2 small cloves garlic, minced
Kosher salt

Steps:

  • Use a spoon to remove the gills from the underside of the mushrooms. Put the mushrooms in a small baking dish.
  • Combine the oil, red pepper flakes, sugar, thyme and garlic in a small saucepot and heat until bubbling and aromatic. Pour the warm oil over the mushrooms, add 1/4 teaspoon salt and toss gently to coat. Cover and marinate at room temperature for at least 1 hour and up to overnight.

1 tablespoon soy sauce, or to taste
freshly ground black pepper
3 tablespoons crumbled blue cheese

Steps:

1 tablespoon basil, fresh chopped
1 tablespoon parsley, fresh chopped
2 garlic cloves, minced
4 portabella mushrooms (4-to 5-inch-diameter)
8 ounces Fontina cheese, cut into 3x1/2x1/2-inch strips
4 slices bread (from crusty round loaf)

Steps:

  • Position oven rack 6 inches from broiler. Preheat broiler. Mix first 4 ingredients in bowl. Place mushrooms, stem side up, on heavy large baking sheet. Brush with oil mixture. 1/2 cup butter, cubed
1 medium onion, chopped
1 cup pecan halves, toasted
1 package (5 ounces) dried tart cherries, coarsely chopped
1/2 teaspoon poultry seasoning
1/2 teaspoon dried thyme
7 ounces (about 4-1/2 cups) seasoned stuffing cubes
1-1/2 to 2 cups chicken broth
1-1/2 cups shredded fontina cheese, divided
