Number Of Ingredients 11

2 cups whole wheat pasta (I used rotini)
olive oil
1 1/2 tablespoons butter
1 cup chicken stock
juice of half a lemon
1/2 teaspoon prepared horseradish
1/2 roasted red pepper
1 garlic clove
2 tablespoons chopped black olives
1 teaspoon Worcestershire sauce
1 (8 ounce) can sardines, bones removed

Steps:

  • Bring a pot of water to a boil, add 1 tbsp olive oil. Once boiling add pasta and cook to desired doneness.
  • In a medium sized skillet melt the butter on medium heat. Once melted add chicken stock.
  • Slice roasted red pepper into strips and chop the clove of garlic.
  • Add horseradish to the pan and mix. Let the liquid reduce slightly and add remaining ingredients. Simmer the sauce until reduced a little more.
  • Once pasta has cooked, drain and add a little olive oil so as not to stick.
  • Add pasta to the sauce, take off the heat and mix to coat.
  • Enjoy.

Tips:

  • Choose fresh sardines: Fresh sardines should have bright, silvery skin and clear eyes. Avoid any fish that has a slimy or dull appearance.
  • Clean the sardines properly: Remove the heads, tails, and guts of the sardines. You can also remove the scales if desired. Rinse the sardines thoroughly under cold water.
  • Use a variety of seasonings: Sardines can be seasoned with a variety of herbs, spices, and citrus fruits. Some popular options include lemon, garlic, rosemary, thyme, and oregano.
  • Cook the sardines over high heat: Sardines should be cooked over high heat to prevent them from becoming dry. You can grill, pan-fry, or bake the sardines.
  • Serve the sardines immediately: Sardines are best served immediately after they are cooked. You can serve them with a variety of sides, such as roasted vegetables, rice, or salad.

Conclusion:

Roasted sardines are a delicious and healthy way to enjoy this oily fish. They are a good source of protein, omega-3 fatty acids, and vitamins and minerals. Sardines are also relatively inexpensive and easy to find. With a little preparation, you can make a delicious meal of roasted sardines that your family and friends will love.
